amazing recipes! Just a note that, when the vegetables are boiled in water, this water has most of the nutrients from the veggies, so you can try to use it water later on, in soups or instead of water when cooking rice, smoothies or something else. Don´t discard this water.

A little comment on Mina's "healthier tortilla" comment: A store bought gluten-free tortilla is definitely not healthier than a wheat tortilla because in the gf ones they often add many many other unnecessary stuff and a lot more sugar. Also: If you are not allergic to gluten there is relly no reason why you shouldn't eat wheat products, your body won't die and you won't get fat over night - trust me and all the other humans that eat gluten and still live a healthy and happy life ❤️ This is especially for some of you who might struggle with having a healthy (by healthy I mean not constantly worrying about food, calories, ingredients, diets ect.) relationship with food and who get easily influenced by thing popular people on social media say or think, even if these people often just think loud and not doing everything they say for themselves or with the intention to suggest you to live a certain way - they are also just humans and can't take care about everything they say/ how someone might understand it 🌞 To Mina: This is NOT a critic or something - i love your vids and your casual, calm and cool attitude! - I just wanted to say that because I struggled with this for a long time and I hope it may help someone to read it 🌻

I made the peanut bowl with roasted sweet potatoes are carrots, the peanut sauce, sautéed spinach and sesame seeds. It was AMAZING. I’m definitely adding the sauce to my list of recipes that I make with the biweekly meal prep of roasted vegetables.

Amazing recipes! Recently I've been loving making pasta (regular or wholegrain pennette, or anything along that) with slightly sauteed cherry tomatoes with a bit of oil and tomato paste, to kind of make the whole dish more tomatoey, all combined with small sauteed eggplant strips. Usually I add also pepper, salt, and maybe some garlic powder, and top everything off with a dash of sesame seed. For a vegetarian version you could add mozzarella bites, or pretty much anything else that goes well with eggplants and tomatoes :) even vegan or non vegan cheese

Usually I'll sautee the eggplant first w/some olibe oil and a dash of water later, set them aside and then sautee the tomatoes. Then put back the eggplant and cooked pasta and mix all together with some spices of choice. That's pretty much it

Top tip you can make quesadillas in the oven! They're not quite as good as fry pan but they require less effort and you can usually fit more than you can in a pan so good if you're cooking for multiple people

I watched your video today, and I wanted to say that Ras el Hanout is a Tunisian spice and a very important one for the matter. It is usually homemade and it’s basically a mix of a big variation of different spices such as dried garlic, dried peppers, turmeric, sometimes ginger and many other rich things. All the spices are dried, combined and then made into a fine powder.

Ok so a couple of weeks ago I attempted the blueberry sweet potato bowl but accidentally added too much milk and ended up with a strange smoothie (?), so it soon became my family’s joke for the next week. Today I tried again, succeeded, and it was soooo good! Didn’t have protein powder or flax seeds so I used LSA mix and almond meal which achieved a similar texture and my mother’s approval (more prestigious than Michelin stars lol) thanks Mina!
