looks lovely, good idea about the flour in the mince, will thicken it. when I do lamb stew I flour it first and brown it off, adding leftover flour. thanks for posting. your dinner looked fit for a king......of cooking.

This is a plan for tomorrow Geoff - thank you for the recipe. The suet crust looks as light as a feather. Just a thought - to save time, the mince can be browned as a block. In fact it will help the flavour as a much greater Maillard reaction will be possible on the exposed surface. Crisp one side, then flip and crisp the other. Less water is driven off thus more searing can occur. The source for this is Kenji. He has a beef stew recipe where he explains it. It may be better to just add additional water if required, if you add stock/wine you’re adding more flavour which may become too much.

I've never seen suet dough made this way before, and I'm 80, but you're never too old to learn. Looks delicious, and so easy to make, plus no rolling out. It's just coming up to midnight here in the UK and I was wondering what to make for dinner tomorrow, oh yes, this is it. Thank you Geoff, love watching your videos. You explain everything so clearly, and I love the way you scrape every morsel from your mixing bowls, and love to watch your taste tests, can judge how good your recipes are just by watching your reaction. Hope my effort tomorrow turns out well.

Oh my goodness me, Geoff. My daughter found suet in Asda and I made this minced beef with suet crust for our evening meal. It was delicious. The suet topping was great. Thank you Geoff, this recipe will be added to my favourites list in the notebook I keep with ingredients and method all itemised for easy, instant reference.

I made this recipe and it was a big hit with my family! And my Husband has put it in his recipe book so it must be good! He is going to put this crust on top of cooked steak and kidney I think it will work well! Personally I like just a little kidney chopped small we like to prepare the filling in a slow cooker. OH GEOFF... this was a firm favourite that my grannie always DID,,, she baked it in her lead range which she used all her life even when my mum got her an electric cooker 😂things tasted so good in it especially something like this when it was so much colder than it seems now.. What lovely memories you have evoked❤... I will do this for me for sure and do Neil a quorn mince with veggie suet that should work.. Thanks again for a great recipe.. Nice one, just a few days ago a guy was reviewing Morrisons dumpling top steak pie (real ale craft beer channel), and i thought about dumpling recipe.. ..and then blow me down…you nail it 👌. Well a similar concept. I think it’s brill, makes a change from pastry, or mash top.

Hello Geoff. I made the fruit version of this suet dough recipe and it was delicious. The suet dough is so easy and quick to make. Tomorrow I'm going to make my version of a bacon hot pot and I'm going to put dollops if the suet crust on top about 20 mins before the end of cooking time. I'm hoping they will look like dumplings. Even if they turn out flattened, they'll still taste gorgeous. Thanks for inspiring me Geoff, your recipes are great.

@@geoffsbakingblog Oh Geoff, I made that bacon hot pot today, and the suet crust dumplings turned out amazing. They're the biggest, lightest dumplings I've ever made. I love the texture of your recipe for suet crust. I halved the ingredients for the suet crust as I only needed to make 4, then I spooned the mixture onto the bacon hot pot, put a lid on top and baked in the oven for 35mins. The dumplings were so big that one would have served two people. Thank you Geoff, you're turning me into a pretty good cook.

Hello Geoff. I let you know that made this recipe for our meal on Saturday, and it was superb. You kindly replied and recommended other fillings too which I will try. Would a fruit filling be successful, with sugar added to the suet dough, then served with lashings of custard. Have you ever made this recipe with a fruit filling, what a quick and easy dessert it would make if it proved to be successful.

HI Di. Yes I think it would be great as a dessert, mixing some sugar into the suet batter and spooning it on top of some stewed fruits such as apples or plums or even rhubarb, with not too much liquid in the fruit.

It's 1.30 am here in the UK, seems like I must be going to bed hungry as I home into your recipes quite a lot in the early hours. I'll use the beef suet I have in store today, but I'm going to buy the vegetarian suet next time I make a fruit filled suet crust pudding, seems more fitting somehow. That's if this first effort turns out well. I'll use apples, honey, cinnamon, nutmeg, a pinch of allspice, lemon juice and zest for the filling, stewed with a little muscavado sugar to soften the apples slightly. For the suet crust I'll use granulated sugar and top it with a sprinkling of muscavado. I'll let you know how this turns out. Thank you for firing my imagination Geoff. You're the tops.

@@delilahboa Hello Delia, I've been meaning to post the results of the suet crust with a fruit filling that I made, but that man of mine, my husband, got pneumonia and I've been busy trying to nurse him back to health. The worst is hopefully over so I have a bit more time to myself, and I can claim success with the fruit version. I used 6 eating apples, sliced, and a packet of frozen summer fruits. I simmered them long enough to defrost the summer fruits and to soften the apples a bit. Basically, I followed Geoff's instructions, but used fruit instead of meat. Hope you give it a try, Delia.

Hi Geoff, oh my goodness this looks so good! …..we LOVE this type of food, Shepherds Pie, Cottage Pie etc, now it looks like Minced Beef with Suet Crust is on that list!…….love the idea of the cheese on top too……looks like it’s been a huge hit with many of your subscribers as well, I’m not surprised, another one for my Recipe Keeper……we’d love even more gravy in the meat, would that be any problem for the crust? Would I be best adding afterwards like you did? I noticed you mentioned the liquid level to Di if she did a fruit version, so thought I’d check to be sure……thanks Geoff……love Jan xx❤xx

Hi Jan. I think a little more gravy in the meat would be fine, though I prefer to keep it separate and add it afterwards. But only because it ensures the suet wont sink in and make it more like dumplings.

Although you could pipe it on it is not as easy, since you first have to put the batter into a piping bag then you have to pipe it. So two steps, and the unnecessary use of a piping bag.
