My secret for that true minestrone taste is basil oregano thyme and sage. All dried. Try it. It is that minestrone flavor that is amazing. I love your recipes and make several of them on a regular basis. Ty!!! 🙋💕

Yes! You can definitely add the pasta right to the soup - but for me, it gets too soggy that way.

Made this and it was spot on. Added some cut up green beans because I love them. Love the idea of keeping the pasta separate. Made a big batch and game some to the kids to take home.

There’s nothing quite like a hearty minestrone soup in colder weather. I also like kidney beans, but cannelloni would be nice too. I like your tips for chopping veggies.

You can easily swap in anytime of bean you prefer! I find cannellini are easier for body to digest. Enjoy the soup!

Mona, did you just throw everything in without sauteeing? And how long high pressure do you use?

Marge Teilhaber I sauté the onions, carrots, celery , garlic etc first then dump in all the other veggies with stock and manual high pressure five minutes with quick release ... add kale at end along with Parmesan if you want .... I boil my pasta separately as well since it’s optional for my household - hope try and enjoy it!

FYI: In Italian, the most common pronunciation of the letter e is "ay", as in the word "bait," and the letter "i" is most commonly pronounced like "ee," as in Pizza. So minestrone (Mi-nes-stro-ne) is pronounced "Mee - ness - strow - nay".
