In this tutorial I demonstrate how to create a pretty cake decorated with meringues, viola flowers and gold leaf.

SNAPCHAT: ROSIESDS
MERINGUES:
130 grams egg white (about 3 eggs)
1 pinch salt
260 grams icing sugar
1/2 teaspoon vanilla essence (optional)
1. Add salt into your egg whites and whip until foamy.
2. Add in your sifted icing sugar and blend on low until all the icing sugar has been incorporated. Then whisk on high speed for 5 to 7 minutes, or until stiff peaks form and your mixture is super white.
3. Pipe onto your baking trays lined with baking paper. DRY these in your oven with the temperature on 35 to 40 degrees Celsius for 3 t 4 hours. Then turn off the oven and allow to dry over night.
PLEASE NOTE: I left my oven door slightly ajar throughout this entire process. You are just trying to dry out the meringues, you do not want to cook them. They will lose their beautiful white colour if you close the oven door on these meringues.

Wonderful cake and so simple! How long prior to serving the cake can you put the meringues on before they begin to disintegrate? Can you decorate the cake with the meringues a day prior?

+Valerie ValerieKo You don't need to put them in the refrigerator. They last quite a while being stored in airtight container at room temperature. If you put them in the refrigerator, they can become moist, which you don't want. Moderate handling is also fine.

Valerie ValerieKo Well, in that case, don't put the meringues on the cake until you're ready to serve it. That way you can have the cake in the refrigerator without the meringues getting moist.

Hey hun, it all depends on the fridge really. They would stay crunchy the first few hours, but if you pop it into the fridge, they would soak up the moisture pretty quickly if the temperature is incredibly different to room temperature. The cooler your fridge is, the worse off your meringue will be basically :) so pop these on as close to the event as possible if you can, and keep the cake in its cake box with the lid on.

Yet another gorgeous creation! :) I've seen you use gold leaf in several projects now, and have wondered: is the gold leaf you use a special food-grade version, or is it the same kind used in other crafts? I've never used it for anything, and don't know much about it.

+Lisa M. Altemose you definitely want to get one labeled "edible Gold leaf" . The craft store leaf is mostly NOT gold leaf but a gold colored metal leaf or "composition" leaf. Edible gold leaf is at least 23 Karat or more (24K is highest it can be) and has NO copper.

They will go soft in the fridge, but if that's not an issue then I guess you could :) buttercream is stable at room temperature so it can even stay out in a box and a cool, dark dry place.

why don't you need to use dowels?

Since the cake is so small (about 6-8 inches tall) there is no need for dowels. If the cake is double that size or several layers then the would be needed so the cake doesn't collapse

Why do other youtuber bakers level their cakes but you do not? Is it an unnecessary step when decorating?

Hi Gyaani, I also level the top of my cakes but I have stopped showing it in the video as 70 other of my videos show me leveling the cake haha. People have given feedback that they would like that part taken out as it gets repetitive, so I have stopped demonstrating it :)
