Let me show you how I make my miso butter scrambled eggs. They're so creamy, fluffy, and delicious! 😋
INGREDIENTS:
For the miso butter:
150g unsalted butter
1 tbsp white miso
Combine them together until well mixed. Place the miso butter in a small container and put it in the fridge until firm before using.
For the scrambled eggs:
6 eggs
Salt as needed
1 tsp soy sauce
Togarashi or chili powder (optional)
INSTRUCTIONS:
When ready to cook, whisk the eggs and salt until just combined.
Heat a pan over low heat. Add a tablespoon of miso butter and wait for it to melt.
Then pour in the eggs and leave for a minute or until they just start to show signs of setting at the sides.
Use a spatula to swirl and create large egg curds, then add 1 tsp of soy sauce. Taste and adjust seasoning as needed.
Continue gently stirring.
Add another 1/2 tablespoon of miso butter to the eggs. Keep stirring until the eggs are thick and glossy.
Pour the eggs onto the toasted bread.
Drizzle with togarashi (optional) and serve immediately. ENJOY!
