I think I invented my own ramen: boil chicken carcass with ginger for broth. when broth is done add white miso and soy sauce. Meanwhile marinate chicken pieces in 2:1:1 soy, sake, sugar, and ginger and garlic(optional). Make black oil by frying garlic and oil, until garlic is burnt. Then add fermented black garlic clove and chop blend in a blender. Bake chicken. Serve broth with ramen noodle. Top with chicken and black oil, as well as any thing optional, like tea egg, green onion, fish cake, chili oil. I tried to make a Tonkatsu ramen with black garlic oil, that people who dont eat pork will like. Please let me know if this is already a Ramen recipe and I didnt invent anything. Also I boiled my chicken carcass for a good 8 to 12 hours...or something to get the rich bone broth and it turned to a jelly in the fridge, overnight. So I suspect that means it was a good broth with lots of the bone gelatin.
