i know it makes it less accessable but honestly i like that they went with the direction they did having some harder to get ingredients in the west. it feels more like avatar having such a strong asian influence and i prefer it over "here's a recipe for a basic cake and a recipe for frosting, frost an arrow on the cake now it's aang cake"

I think the reason the fish is being left out of the Sea Prune Soup is because it's supposed to replicate having a bunch of leftover fish bones and duck carcass etc. The broth is really just a way to make use of leftover bits from other things you've cooked that aren't going to get used elsewhere, and this is a decent way to approximate that.

In Brazil we have a real recipe like that. We use the fish meat in a cassarole and save the bones and left overs to make a sauce, we then drain the liquid from the bones and heads and thick it with mandioca flour to eat with the cooked meat, rice and other side dishes.

I suspect that only having duck feet was a major factor. The flavour and richness of meat broths is generally imparted by the bone marrow, of which there is not much in the feet. Fowl feet are typically used because they contain a lot of collagen which can give a broth a silky texture, but for taste they are pretty useless.

@@ixicnika We do the same for turkey in my family; once we're done carving meat off the carcass, straight into the big pot it goes for a 2-day soft simmer. Strain over another pot w/ a collander, and the meat just falls right off the bones. Once we've picked out the skin and bones, in go potatoes, carrots, onions, 2 bay leaves and spices, then egg noodles or rice~ That sh*t is the BOMB, and so much less waste!!

I actually am friends with the chef who wrote this book. Jenny is amazing, such a multifaceted and passionate person who put a lot of love, research, and passion into these recipes to capture how the show made her feel. Not all the recipes are for everyone, but knowing where her heart was in making this makes the biggest impact ♥️

@@jinja-ninga97c21 I know I'm not who you asked but many broths and sauces are flavored by that techniques. The little fried bits that stick to the pan get cooked in into liquid when it is added. Which made me giggle when he thought the fish sticking was a mistake lol. Bones also impart flavor. I do agree with him though if you can get the fish parts with using a whole fish then do that or just buy a fish stock. This is a useful technique to learn for sure.

I LOVE how detailed every piece of the show is. The show takes place in war so obviously some of the recipes are more struggle food. It also shows the wealth gap between the nations. I love how they kept it real and the recipes are actually from the show. This show always manages to surprise me. So good and detailed! I somehow always forget that our main characters are war children/children from war

From my understanding of inuit and arctic cultures, they used every part of what they hunted and fished, so I think the stewed sea prunes soup is a dish where you used pieces of the fish you would normally throw away. Like if you make a fish dish, you eat the fish, but then you save the bones for later. Later being when you want to make sea prune soup.

Sea prune soup sounds like what they wouldve had to do during the days they couldnt go out hunting or was the height of the winter months. They wouldve used whatever was leftover to substain themselves and that is honestly like a really good story detail since its a food that is about substaining yourself not the taste.

It doesn't make sense to cook a fish & not use it in our world but in the Water Tribe they probably use every part of the fish & so the bones went into soup & the fish got used for other things like dried meat to eat on hunts.

I think what's throwing the recipe off is the duck tbh. When you look at the Water Tribe, what they would be using is Arctic animals, which ducks are not. I get that not everyone is able to just pull out an Arctic bird, but there's gotta be a better substitute.

Based purely off the ingredients, sea prune soup seems like a great way to use leftover ingredients. I make broth out of leftover chicken and fish bones from my meals on the regular to use the bones and for health. It helps me take my vitamins but I always add a ton of fresh cracked pepper and either fish sauce or a MSG+paprika+curry+mustard powder mix cuz it tastes like not much. Sorry for all that paragraph lol, hope the engagement helps! Eager to see more of your hard work with food!

As far as I'm aware, they're literally just unfried cookies. Either carnival funnel cake dough(similar to pancake mix), or a sugar cookie. Just don't use raw egg if you want the utmost safety. But I've eaten my fair share of entirely raw sugar cookies and yeah. Pretty damn tasty. It's why I liked them in the show, 'cause I know how it tastes.

We have lots of fishy soups in Cantonese cooking and I always use the fish head too when I'm making the broth (with some rice wine to cover up any odd flavors). And instead of the duck feet, a whole bunch of chicken wings might have made the broth more intense.

Toasted barley flour is pretty easy to make in small batches with a spice or coffee grinder. If your Asian grocery doesn't carry Tibetan food, most supermarkets carry whole barley. I'd like to see the Fire Flakes too, just rewatched Babish's version of them a couple days ago.

Very fun show. No surprise they get a little out there with ingredients but it is a world spanning epic and a lot of items are probably going to be found at an asian market. If you have extra time and like a book then by all means show off some interesting recipes, the 3-4 meal sampler is nice for an initial review but there are probably a lot of nice dishes that look great but you already picked a soup/salad like it

Dried morels seems like a strange choice. I don't think morels are typical enjoyed dried and rehydrated like many other mushrooms. Surprised they didn't use shiitake which is more typical, the water you rehydrate them in makes for an amazing umami broth base. I don't know much about fish maw though.

Since the water tribes mimic indigenous/alaskan tribes in real life, they also follow a "use everything" philosophy. The duck carcass and additional bones were to make more of a bone broth/fatty stew and duck feet by themselves wont do that since they're mostly collagen anyways. I would have added the fish anyways due to there being no duck.

I feel like the soup is supposed to taste like a "Struggle meal". Which would explain why you use fish bones. Think how chicken and waffles should use leftover fried chicken or chicken pot pie is supposed to used leftover chicken. Your personality, presentation (both videos and cooking!) and niche topic combined makes your channel really shines and you definitely deserves more views! The peaches are similar to what my mom used to make on hot summer days. She'd take yellow peaches cut them in half or thirds and would grill them on one side until well..grilled. And then we'd slap vanilla ice cream on top. Literally the best thing ever

Really appreciate this video. I got the cookbook a bit ago and have just been lazing around not trying anything in it. You chose some recipes that didn't really interest me (the fire flakes and bean curd puffs) that I am now going to put on the list when I decide to do some bulk shopping next time! Also, small note, the sea prune soup having a duck carcass in there seems a little odd but there are a decent amount of recipes that include duck meat there, so probably was a recipe to deal with the extra bits. Great work and def subscribed!

You can make your own hazelnut flour by simply grinding hazelnuts in a food processor or blender until they are the texture you're going for... I'm betting the barley could be done the same way, but you may want a finer grind than you can achieve with a processor/blender... if you have a flour mill, then go for it, but that one sounds like it'll need to be an internet purchase.

I feel a little disappointed that the soup didn't actually have prunes in it. I think a thick, salty stew with real prunes in it would be delicious

I'm guessing "sea prunes" aren't actually prunes, in the same way that a sea cucumber isn't a cucumber.

There's a Scottish stew that includes chicken wings, leeks and prunes. It's called Cock-a-leekie, and it's quite good.

You can make your own hazelnut flour by processing whole hazelnuts in a strong blender like a vitamix. Once it’s completely ground into a powder u can use it like any other nut flour. You can do the same with barley, dry toast the barley on a pan till it browns then process in the blender till it’s a powder. I hope this helps and you can make the tarts!

You can do the same with other nuts and grains too! I used to work at a bakery and whenever we ran out of oat flour or almond flour we would just process whole oats or almonds till it turns into a powder!

Morels are one of my favorite mushrooms to forage! They're pretty much impossible to cultivate on a large scale, so all you can really do is buy em dried or forage them for yourself. Weird for a mushroom of that size, theyre ascomycetes. Morel is commonly confused with gyromitra, which have a toxin called gyromitrin in them. Gyromitrin is easily broken down into monomethylhydrazine when digested, making the misidentification potentially deadly

Really well made video I loved it im happy you told us how you liked the food or disliked but also why. in most food videos ppl just say they liked or disliked but not why in terms of flavors or textures or anything else 🙂

I was given this book as an anniversary gift this year. So far, I've made: Blueberry Cookies, Earthbender Mudslide, Komodo Chicken, Sweet Rice, Simple Steamed Vegetables, Freedom Fighters Roast Pork Belly, Gran Gran's Smoked Arctic Hen Legs, and Sizzle Crisps. Having an Asian grocery nearby really helps but those ingredients can get pricey sometimes. So far, everything I've made from it was really good. Those bean curd puffs look good too. I may give them a go later. I'm interested in the Fire Flakes but don't have a dehydrator to do it proper.

@@MisoHungrie If you do the Komodo Chicken and plan on it all being eaten in one sitting, consider just coating the chicken in the spicy honey dipping sauce. It was so good that way. I had some as leftovers and it wasn't as crispy on being reheated but it was still great.

I always imagined that sea prunes where the Avatar's version of sea cucumbers, so it makes sense they'd use a mushroom instead, cause unless you actually are in Asia at a fish market, I doubt anyone would find a sea cumber just sitting between the salmon and red snapper at your local grocery store. Also, not gonna lie, the way you prepared it made it look like monster food. LOL XD

You could use the broth to cook some rice on and dehydrate the fish maw and morels again. I find that making things crispy usually fix them and honestly the broth can come in handy as rice seasoning if you add a couple of spices to make it more flavorful. These are just some things my mom taught me about what to do with recipes that don't work and "fixing" some cooking mistakes, and she's an excellent cook lol. We specially hate wasting food and money when we happen to not be able to make a recipe work, so we've wired our brains to logic out ways to revamp the ingredients we have.

The aangs favorite egg tart is amazing!! I have made that multiple times. Luckily there is a local mill near me and I was able to get all the flours I needed for it easily. If you can find them you have to make them. The freedom fighters pork belly is amazing as well.

I'd say yes! It's one of the best cartoon series of all time, in my opinion. Perfect for kids and adults-- which can be a tough balance sometimes.

I collect novelty cookbooks from various cartoons and shows and I actually own this one, the Necronomnomnom, and the Star Wars ones you did, amongst many others. If I might make a few recommendations for future cookbooks to take a look at. Adventure Time: The Official Cookbook Has many absolutely delightful recipes based on the show. And it has a sort of ongoing story, where the residents of Ooo found this old pre-war cookbook and decided to add their own spin on it, passing it around to each other. So some recipes are written by Finn, Jake, Princess Bubblegum, etc. AND...it has some of the best pancakes i've ever had in my life with Jake's Bacon Pancake recipe. Its my favorite cookbook. The Teenage Mutant Ninja Turtles Pizza Cookbook This book is LEGIT. The pizza dough recipes i've tried in here are out of this world and it offers a wide range of different pizza recipes with a Ninja Turtles spin, from classics to the rather odd Michaelangelo influenced toppings. And there's a bunch of other creative recipes besides pizza. Everything i've made here has been outstanding. Disney Recipes: From Animation to Inspiration This was my very first cookbook and is quite thick. It teaches you how to both recreate many dishes from various Disney movies and some that are inspired by the films. Its an absolutely gorgeous book and most (but not all) of the recipes have lovely pictures of the food. You must be wary though, as at least some of the recipes have errors. There is in particular a chocolate pie inspired by an old Huey, Dewey, and Louie cartoon that tells you to pour CUPS of salt into a pie dough, which results in a horrible inedible pie. That being said...the pie is from a short where Huey, Dewey, and Louie prank Donald with a terrible pie...so i've never been sure if this was a mistake or on purpose.

Toasted Barley Flour & Hazelnut Flour should be simple to make, if you have a good food processor or high end blender. The trick is processing the hazelnuts into a flour without making hazelnut butter. Same with barley, then you'd toast it in the oven or in a pan on the stove until it darkens & looks toasted.

hey i'm from the southern tribe and yes you have to put in the wings of the duck for the broth plus tuna is better for this dish, we mostly put the leftover fish inside the dish right before serving

The soup actually looks kinda tasty (although I would add fish sauce to the broth) but I was totally thrown off when the duck feet suddenly appeared on screen 😅 I don't even know where I could buy these, let alone the dried mushrooms. Aww please do the fireflakes and perhaps the egg tart! Maybe you could try to substitute the ingredients somehow or do it without the roasted flowers (their taste is probably quite subtle but who knows). I just looked up what "roasted hazelnut flowers" are supposed to taste like but I didn't find anything at all
