In case you were wondering: MLB bats cost around $180. The reason they let fans keep balls without contest is because they only have a short term use anyway. The reason they typically don't let them keep fly away bats is a)security reasons, aka, bat=weapon, or b)they keep it until the end of the game, and then give it to them, or c)a player may want their bat back (sometimes players have forked over their own money for specialty bats) and in those cases they or security will often trade the fan for a souvenir bat instead.

They are custom made for him to his specifications (within the rules). Usually, a representative of that team will will trade the fan a standard team bat for the players personal one.

Not sure why these people that catch a bat are so quick to give it back. If a ball, a bat, or any other piece of gear is thrown or flies into the stands it becomes the property of the person who catches it. If they would just say, "no. Im not giving it back. It belongs to me now" they could really ask for anything within reason in return. A different signed bat is nice, and usually the most you can get. I had a friend ask to meet the player and that was denied. Remember it's just his game bat. They wanna make it a fast trade and get it over with. You still can't go wrong holding out to see the best deal you can get.
