RECIPE
▼Ingredients
Dark chocolate 70% 100g
Unsalted Butter 50g
Sugar 50g
Milk 80ml
Egg Yolk 3 (~55g)
Cocoa powder 25g
Cake Flour 30g
Egg White 3 (~90g)
Lemon Juice 1ml
Sugar 50g
Salt little
▼Instructions
1. Chocolate, butter, sugar, melt in water, add fresh milk and egg yolk
2. Add the sieved cocoa powder and flour, and mix well
3. Add lemon juice and salt to the egg whites, add sugar in portions, and beat until soft peak
4. Add the egg whites to the egg yolk paste in portions, mix well, and pour into the mold
5. 180C / 356°F, 25-30 mins, let cool after baking

2年後的更新,建議烤的時間長一點,大約40-50分鐘。可能我以前的烤箱不穩定,溫度比較高,現在換了烤箱,發現烤的時間需要比較長。希望大家成功❤ An update after 2 years, I suggest extending the baking time a bit, around 40-50 minutes. Maybe my previous oven was not stable and had a higher temperature, but now that I have changed my oven, I have found that the baking time needs to be longer. I hope everyone succeeds.❤

多謝MoLaLa 食譜,好成功!! 我沒有6”的蛋糕模 做了 12杯小蛋糕一樣成功! 170℃ 20分鐘 無風 插入牙籤還有小小黏上 再加10分鐘 插入牙籤都一樣有小小黏上 所以我諗其實應該20分鐘就可以

Yummy! I have a family history of Cancer so will try this with almond milk and Just Egg as need to avoid all the estrogen in dairy and Choline in eggs--thanks for posting

Thank you so much for the recipe! I cut the dark chocolate to 40g, sugar to 60g (I replace half sugar to honey & half coconut flower sugar). Then put the first mixture together with milk in microwave for 30 sec, add flour first then add egg. The result turn out well, and it's still really rich and the sweetness just nice for me.

Hola, lo he hecho y de sabor es totalmente exquisito sin comparación alguna, sin embargo no he logrado la estética pues aunque quedo muy lindo con una decoración de nueces y gotas de chocolate. Lo hice en un molde de 19cm con papel encerado al fondo nada más y sin engrasar ni enharinar el molde para que se adhiriera a las paredes del molde. Gracias por compartir ❤

用家路過分享一下~ 我前2天做了雙倍份量,因為我家的雞蛋很小,連殻只有50克左右,所以用了7隻,然後看糖量好似比平常多(可能是我低估了brownies 的邪惡😅)想減一點糖,蛋白用了80克糖,到進烤箱烤的途中再看一下原來蛋黃也要用100克糖😨但係已經正在烤了也無力回天了😢….所以…我一共是減了120克糖…足足6成……但是…結果…都是成功的😅 我用的是8吋古早蛋糕模,加了油紙底所以沒有倒扣,也沒回縮,出來甜味是夠的,而且我個人覺得是好吃的,所以如果大家想試但又因為看到糖量卻步是可以減一下糖的,這個蛋糕絕對有減糖空間😅喜歡苦苦啲可以先試原食譜一半糖量甚至像我這樣減6成~ 我找了超多特濃巧克力蛋糕食譜,這個係真的最正👍🏻👍🏻👍🏻

感謝長文分享,因為黑朱古力同無糖可可粉,所以糖量會增加,成品唔算太甜。每種朱古力甜度都唔同,可以再調整😝

@@MoLaLaCook 我用普通黑朱古力~如果用75%以上就吾洗減好多,但我自己平時糖量計,按自己口味就每用一只雞蛋配10克糖🤣所以就算計返一倍6只蛋120克糖應該都好夠~我比較鐘意苦苦地😆

*Answering according to my knowledge.* Brownie is fudgy, dense in the middle & slightly crispy on the outside. While a cake is spongy & soft throughout. The main difference lies in the texture, cakes are usually airy & brownies are rich.

Thank you for this delicious recipe as well as for your beautiful videos. I made this cake today and it turned out so light, moist, chocolaty, not too sweet and just perfect. I baked it for 35 minutes instead of 25-30 minutes though. The only thing is that the cake became flat as soon as I took it out of the oven. Do you think that adding some baking powder would be a good idea to help the cake to raise and to stay this way? Otherwise it’s the best brownie recipe I have tried so far. Thank you 🙏 ❤

I made this brownie cake again by adding a tea spoon of baking powder. I baked it at 180 degrees for 30 minutes. It turned out really delicious, light and fluffy like a chocolaty cloud ☁️❤❤❤❤❤ thank you so much for this wonderful recipe ❤❤❤

Because of the small mold the cake rises very much. If you didn't cool it upside down the high cake would colapse and become very dense. I would use a much bigger mold and rather have a flater cake!

I tried it 2 times already. The recipy is perfect, everyone loved it. But mine didn't stay like yours. The cake just fell, it wasn't fluffy all over like yours. It was more on the fudgy side I don't why 😅. I did cook it all the way through, he just deflated while cooling down 😣

All cakes deflate during the cooling process unless you cool the cake upside down like her!

When make cake, you can also put some foil over after outside is done. Use stick to check. This way yiu can to let it cook some more internally. Prevent soggy inside.

I tried making this. I followed all instructions. I baked for 30 mins at 365F when I took it out the centre of the cake is so soft like lava cake. Would u be able to tell what have I done wrong? Still, the taste of it is great!!!!!!!!! I’m sticking it back into the oven for baking for another 20 min see how things go.

@@vincing322 then it might be the egg whites, bc in the video they didnt specify till what kind of state you should beat it. You could watch videos relating to how stiff you should beat the eggwhite to create a fluffy cake rather than a compact cake. I made this cake today and used a 7-inch cake pan since I didnt have a 6-inch cake pan. My cake took 30 minutes (350F) and was just as fluffy as in the video only lower, but that's bc I used a larger cake pan.

@@XLiYu thanks Jacqueline. The cake came out good after I put it back into oven. Maybe you are right the egg white might have been beaten not enough. I stopped once I reached soft peak.

спасибо за рецепт. Он великолепен! у меня не получился таким же пышным. Но получился внутри влажным и типа фадж-текстуры. Такой и должен быть брауни. Обязательно попробую испечь с такими коржами торт с прослойкой ганашем и малиной)

請問倒轉放涼的時候掉下來是烤不夠嗎?裡面組織偏濕,但我已烤到32分鐘左右,小刀插入看無沾黏才出爐的,結果一倒扣蛋糕就掉下來了😢
