I'm not big on cooking from scratch, so I don't bother keeping extra salt in the house. Only spices and different peppers for a bump in flavor. Every food made for even the slightest convenience already contains enough salt and fat, even when reduced: soups, sauces, snacks, condiments, canned and frozen foods, etc.

I buy low or no salt stuff so that I can control how much salt to add. I almost always add some salt, either directly or via a known salty ingredient, and can definitely tell when the food calls out for it. I'm also learning to tell when a dish tastes 'flat' and can do with more acid, sweetness or umami.

Salt, the kind that still is rougly in its orginal form (ie it still has its minerals) is actually quite necessary for your body. It has been associated with long health and other health benefits. The refined version (basically just Natrium Chloride) does not have this. Make sure you include at least a little of the unrefined salt in your diet. Also, Iodine is regulary added to basic kitchen salt and bakers salt, which is also necessary for basic bodily functions. So if you cut down on the basic salts too, you have to make sure to get your Iodine from somewhere else.

I've made so many of her recipes and it's never been too salty, just very well seasoned. Her pastrami roast chicken is particularly good. I did, however, recommend a potato recipe to a friend, who made it and declared it inedibly salty. So I guess your mileage may vary. If you understand the type of salt you're using and taste as you go, where possible, you should be okay.

As someone who has to maintain a low-sodium way of life, I found that getting your palette away from the overly-salted (how American food typically is) completely changes your tastebuds. This means that when I eat in restaurants, everything just tastes inedible due to over-saltiness. When I cook Molly's book, I use 1/4th of the amount of salt she calls for and it's very seasoned to my tastes. I couldn't imagine using the full amount 😅😅
