Your pot salad looks delish~ I just lost my Mother in late Feb. this year. I am still not ready to make any of her recipes yet. It is nice and inspiring to see you remember her with happy memories. I am not there yet still hurts. I can not wait till I am able to think about her in any depth and just smile instead of this gloomy sadness. When that day comes I think I'll make her enchiladas it was always my favorite when I was a kid =)

My friend gave me a recipe for delicious potato salad a few years ago. She boiled the white, yellow or red potatoes, skins on. Peeled them when not too hot to handle. Cut them in chunks similar in size to yours. Put them in a bowl, pour creamy French dressing on them and gently mix-in. Refrigerate covered overnight or for several hours. Then I add celery, chopped carrots red pepper, chopped hard boiled eggs. I stay away from onions lately because my son has a problem eating them lately. Mix in with some mayonnaise until the consistency you prefer. Salt and pepper to taste. My husband loves this version! Some people look at the slightly orange color and maybe think, eww. But give it a try!

Good one my friend, I agree we think all the potato salads we grew up eating were and are the best. i loved my mother-in laws also. Top notch stuff, she passed away last May. Love the nostalgia Ry! Mom always made the best potato salad!!! Ours is exactly the same but my grandmother and Mom used a teaspoon of freshly finely chopped dill weed! My favorite time of the year because I knew the pickles were going in the jars!!! Thanks for sharing and bringing back those memories!!

Kind of reminds me of my grandmother's potato salad. But she had an ancient egg slicer that she'd use to dice up the eggs and potatoes. Everything was the same size very small cubes. We've used mostly the same recipe over the years but the ingredients have gotten a bit chunkier as we don't use an egg slicer anymore. Try adding a little dill to it some time. It's really quite good. Especially in an acidic dressing like yours.

Ry that is pretty much the exact recipe I use except 2 differences. I mash the potatoes, and add a couple teaspoons of celery seed to the dressing. My mom swears it tastes exactly like her moms mashed potato salad, and that makes me feel good.

My favorite side of all time is of your "Garlic Smashed Potatoes". I've made and shared them with several of my friends and guests. They ALL agree.. those things are fantastic!

2lbs red potatoes cooked, cooled and chopped 1 medium red onion chopped 4 or 5 hard boiled eggs chopped salt and pepper to taste any mayo you like coat evenly enjoy

That’s is almost how my grandmother made her’s. But she put her mayonnaise in a separate bowl and she would add pickle juice ,her spices and a little bit of sugar then her very secret ingredient yellow food coloring. My grandmother hated mustard so she used yellow food coloring in that bowl instead of mustard. Everybody in the family thought she had the best mustard potato salad there was and there was not one drop of mustard in it LOL

I can't boil my potatoes , I always ruin them. I usually either put them in the rice cooker or steam them in the instant pot. I kinda have to do things idiot proof.
