It really surprises me how inexperienced mums can make some really amazing dishes and gain some great experience just by learning what kids eat and cooking for them. Agatha jay Well... it kinda does. If an ingredient doesn't shine as much as it could in a different food, that means the food where it doesn't shine is worse in term of using that ingredient. If in 1 dish I make duck that tastes fantastic and in a different culture's dish I make bland duck, because that's how that culture eats it, that culture's food is worse. If I make kimchi tofu and it tastes fantastic as compared to putting tofu into a caesar salad, where it almost always remains tasteless, does that mean that those 2 dishes are on equal footing?

I'm American, and I actually love tofu even though I eat meat. It's really good when you marinate it with teriyaki sauce and then bake it in the oven. Also I make my own homemade miso soup and it wouldn't be as good if there wasn't tofu in it.
