Made momos for the first time today and they turned out quite good. First attempts have always been a hit or a miss, but not this time, thanks to your clear instructions. Kneading for 10 minutes was a good workout too, makes for a guilt free momo eating session. Replaced pork with minced chicken and used some butter since the meat was lean.

More than the specifications it's the joy and peace of making something calmly. Its not a hurried channel which doles out recipes....it documents processes intricately hence the precision. Also these guys are super duper hygienic...without being fancy.

Just a suggestion. Would it be possible to include measurements in cups/ tsp/ tbsp as it is not always possible to measure out ingredients in gms specially for those of us abroad. I love your presentation and clarity. Look forward to more.

We can't say if that's the secret behind all good momos everywhere (everyone has different methods), but we've noticed a difference in texture when we've used baking powder versus when we haven't.

Momo wrappers are not supposed to be super thin like wontons. And this is the traditional way of rolling momos. If you see any Tibetan cook, this is how they roll it. Just takes practice to get up to speed.

Most Momos in India and Nepal are missing vitals item that is soup and salad that goes along with all Tibetan Momos.

When availability of momos was limited to hill stations of North like Dehradun etc they were being served in the correct way, even today momos are served with soup and salad in Dehradun but then in recent 5-6 years momos have gained popularity in the whole country and they have been transformed and in some cases destroyed, for ex. chocolate momos or cheese momos 🙄, hadd hoti hai. Look at those dry over chewy tandoori momos, how will they serve them with any soup, itna bhi distort nahi karna chahiye kisi recipe ko.

Momos were served with soup in nepal and still it is served with soup in many parts in nepal but since a decade and half or so it is served with sauce and pickles only in cities like kathmandu and pokhara.... Momo is originally from tibet...businessmen from kathmandu used to go to tibet for business/ trade around half a century ago introduced it in kathmandu...later they added typical newari spices buff meat and tomato achar to it...momo in kathnandu was called 'mamacha' as in newari language they add 'cha' with names.....now momo has become nepali food.......momos todays found in south asia spread from nepal....this is the summary of my reserach on momo.

@@asmi227 I was seeing Tibetan and Nepali Momo spreading to south India more that 20 years ago, Kerala, Goa, and other places with a growing tourist industry. Many years before I discovered the Momo in India, I was introduced to a traditional Chinese New Year dish called Jiaozi. It is quite similar to pork Momo, main difference is the dipping sauce, you can have a chili oil but always a soy sauce, as a rule soup is not served. I see many Indian Momo recipes like to add Garam Marsala to the filling mix, I don't like that, but taste is developed during childhood, and sometimes a new style of cooking is born. Wonder what Indian food was like, before the Chili was introduced from South America, in those days you only had Pepper for heat.. The hill station Momo I had more than 25 years ago where stuffed with yak, they where very chewy, but delicious :)

I'm thinking like this, in ancient times, people competed with making the best food, and most dishes developed by a fusion between cultures. The fusion kitchen started thousands of years ago, but don't tell the young kids who think they are reinventing food :)
