I have that cheese grater. Love it makes my life so much easier and saves me money on cheese. I can buy 5lb blocks of our favorite cheeses on sale, Cut them into half-inch squares then cut those in half. I put it through the shredder, weigh 1lb portions, sprinkle it with a little cornstarch to keep it from sticking then toss it in a bag, and into the freezer and it usually lasts till the next sale.

I always add some Olive Oil to the Pasta water to keep it from sticking together ....maybe a tablespoon full.

Hi Catherine, I finally got around to making this last night. I made the recipe exactly as directed, except I added some thinly sliced carrots, both to add some more color and also to use up some I had in the fridge. I have a friend I share with, as we're both widows, but she doesn't love to cook. She loved the casserole; I liked it but found the amount of onions a bit much - they were overpowering and I could still taste them hours later. So, final thoughts - the recipe is a keeper, but next time I make it I'll be more sparing with the onions...at least on my half! Thank you!

You made sour cream chicken for enchiladas. Just put that mixture in some flour or corn tortillas, pour enchilada sauce and green chillis and cheese over it, and bake for 40 minutes at 350. You can also make several single portions and freeze them.
