Millets should be soaked only then it should be used, as the phytic content should be released only then on consuming the nutrient absorption takes place…

Many commented on this topic before, saying that millets have to be soaked but didn't tell the proper reason. But you were the only one to point this out with the scientific term, so it was quite easy for me to do a deep dive on this topic. And what I learnt was, people with zinc and iron deficiency must soak the millets for the maximum absorption. But roasting at 70°C and grinding also reduces the phytic content and makes it digestible. Roasting slightly decreases the protein content but increases the minerals like calcium and iron.
