Happy cooking!
Why do we add sugar for fermentation?
sugar acts as food for the natural bacteria in the fermentation process, helping them grow and produce the desired texture and flavor in the batter, even without added yeast.
why to keep the batter vessel for fermentation in sunlight?
The sun's warmth accelerates fermentation by providing an ideal environment for the growth of beneficial microorganisms, leading to quicker fermentation of the batter.
why do we add cooked rice while grinding ?
Adding cooked rice to the batter helps to achieve a softer texture because the rice adds moisture and contributes to the overall tenderness of the final product. Additionally, the rice grains break down during grinding, creating a smoother consistency in the batter, which translates to softer idlies after steaming.
