Those knobs could be choke and the could be for the overhead light.

Sooo, that ‘chrome’ knob could/should be for the rear ‘defogger’. Basically an auxiliary fan motor that pulls cabin air and blows it on the rear window. It should be mounted to the rear package shelf (via the trunk) IF it is/was equipped that way originally. The ‘black’ knob should be the fresh air vent control (driver’s footwell)

Ok ok I see it back there. Looks kinda like an old speaker. Boy the location of the knob makes working under the dash a real pleasure!

👍🏻 An unusual option back in the day…and everything about trying to work under those dashes (Mustang/Cougar/Maverick/Comet) was/is a PITA…IF you need to do a lot of work it’s often simpler to remove the cluster to work through the dash instead!

$15K for all three vehicles is a really good deal, if you ask me. I don't think either know in the 68 is factory, but not sure what they are for. Yes, I have done the cowl in a 73 Mach 1. It is not a trivial. I'll email you.
