Chef once you buy thyme wash it and dry it store it in a paperbag....thyme for months and it doesn't loose the flavour😊

this is his version of green seasoning, its not Jamaican as he says,we don't put ginger, rosemary or some of those other things he used.vinegar will ruin your dish be warned.

Vinegar will not ruin your dish if you used a small amount in your preparation . Example half a small teaspoon and make sure you buy a good quality white wine vinegar or Asian white wine vinegar. Vinegar is to preserve the taste of the seasoning for at least two months stored in sterilise glass jars or freeze as chef Morris suggested.

Sir, it's Caribbean green seasoning, sofrito if you're in the Spanish speaking Caribbean. It's so annoying how Jamaicans hyjack things and magically call it yheirs when wr all have been using the same thing.

You shouldn’t say that, it’s mean. I have made my own jerk seasoning from time to time. All those things are in Jamaica. Some Jamaicans will use different seasonings especially the older people. My mother told me about dishes her mother used to make when she was a child. So please be respectful. God did not make those herbs for the Spanish people alone.
