Just discovered your channel. Your presentation is very well thought-out, and answered a lot of questions I had regarding this recipe. That said I've noticed 2 separate ganjang gejang camps, those who add soju and those who don't. The soju version sounds much better to me, tbh tho it's probably because I'm an alcoholic. x) Anyway I also checked out your website and I'd recommend adding a search function as you add more recipes. You're obviously taking this seriously and I wish you all the best.

It's sorta like vodka pasta sauce. Some flavours are only soluble in oil, water, and alcohol respectively. Oil and water don't mix, but oil is soluble in alcohol and alcohol mixes with water. It's basically a holy trinity of flavour emulsion. I'm gonna try two different batches, one with high % original and the other with yuzu-flavoured soju. I'll tell you what I think after letting it ferment and mature a bit.

@@FruitandSup Just an update, them flavoured sojus never seem to do it for me. Anyway, if you enjoy Chinese drunken chicken, well that's the accent you'll impart to the crabs. Honestly I think it works much better with the far more complex flavour of crab than chicken. I used a "fresh" soju and I found it too subtle for my liking, compared to how bold a traditional drunken chicken would be, so I'd recommend an original +/- 15%.

I use Korean Monggo Sun Soy Sauce (green packaging) - I like that it’s not as salty!
