I like the fact that the cameraman states the cost of the fish or ingredients and how much it should sell for. I always wondered what it cost to make a dish and how much profit the restaurants have to make to cover the cost of service in addition to the plate itself.

I understand these types of video can be a little graphic to some people; but to me a chef like this shows great respect and honor to any animal harvested. So many animals are basically machine slaughtered and spererated and processed then frozen. These creatures are turned into works of art.

I love this video!!! I also love oyster sauce, and although I hardly ever like fish, except for Canned tuna, this looks amazing and delicious!! 😋 I also love that he explains which parts are for show, and what’s for actually cooking with. This is a truly skilled chef, speaking as someone with culinary experience, he has serious talent and doesn’t take himself too seriously.

love watching this guy cook and being a person who can damn near catch water on fire I'll admit I'm a bit jealous of his skills but like all things it takes practice. and also watching anyone with knife skills who can cut up things with confidence and not be afraid you will chop off a finger is always fun as well.

I find it somewhat hypocritical of those who eat meat, seafood etc but are appalled when they are confronted with the reality of where their meat comes It is simply a fact of life if you are an omnivore (eating meat and vegetables), the meat comes from living creatures. I have had no problems with that.

I think it's best when you use live fish. That way you know it is the best quality. You really inspire me to use fresh ingredients. I love how detailed you guys are in your videos and how you show every step. Plus the questions asked by the camera man is great, like why it is cut a certain way. Anyone who complains about your videos for killing live sea life has absolutely no place in the sushi biz. I work as a kitchen hand and I deeply appreciate getting to see these videos. Cooking is both a science and an art and it requires the freshest ingredients especially when you are working with meat and certain types of seafood. Those people leaving negative comments are uncultured, uneducated children. If they think they can appreciate a sushi chef and want to be one someday but can't handle preparing live ingredients they are unwelcome in the kitchen. I would walk out on a sushi restaurant if the head chef was such a danger to their clients. These children have no idea how the world works and it makes me fear for the future of humanity. The only good news I have is that I've never worked in a kitchen where the head chef was practicing unethically.

And honestly I don't know why they do, I choose to believe that those people are young and ignorant. This is what people do, we eat meat. We're animals. Omnivores to be specific.
