I mean it was really the only time she did that in the show. She normally passed her mistakes onto other people, constantly teamed up on people with Kaisha and threw Scott under the bus so many times when he switched teams to keep Kaisha around even when she did worse. That scene shows way more of Scott's personality because despite being treated like trash by Joy pretty constantly he still went out of his way to comfort her and try to make her feel better when she wouldn't have done the same for him.

Of course he has a heart. A lot of people think he's just a mean jerkoff, who screams and yells at people all the time, because they see him in HK, KN and what not. But he only does that to get the best out of people. Have you ever seen videos of him with his family? He's just a normal guy in real life, but when he's working he wants only the best from himself and others.

I kjnow this comment is 2 years old, but I love the raw version of Hells Kitchen they published a few months back. Shows that while he's demanding obviously, he does help the team. It's just that he switches kitchens, he overlooks both kitchens, he has to take the orders, sort them, and still finds the time to help them if they struggle, enough for them to get back up. It's just that when he feels that it doesn't work and they don't get back up that he eliminates them

Wholesome when Gordon was talking to Joy. He originally got pissed off but when she clarified she was pissed with herself and not him, he stood back and let her have a moment then gave everyone some time to "polish their dish" so she could cool off. And that little chat he had with her in a calm, respectful voice shows he respected that she cared.
