next time when making a caramelnutamathingy, you should consider letting it cool in the bakingparchment while hanging. Just wrap the caramelnutmixture with bakingparchment as thight as possible and ty a rope on the end, and then you wont have to do all the work.

It shocked me too, that it actually caused the damage it did, I wasn't expecting that. I wouldn't risk putting a pan down 1/4 the heat of that pan on my work surfaces - they are the crappy laminated ones (plywood?).

Any other chef would have left that singed worktop bit out - they're too obsessed with perfectionism and planning and all that. You're my kind of cook - the kind that screws up, that redoes things, that admits defeat but tries again. In the end, the result is oh so much better because it is earned through hard work and a bit of finesse. I can relate to your videos and cookalongs much more than I can to any other person's. Keep it up, whether it's at home, in a shed, on the moon or whereever else life will take you. You're great.

Love your videos! There are two different kinds of nougat by the way. One on an eggwhite base and one on a hazelnut and chocolate base. The second one is more common here in Germany and therefore used in the original toffifee. You basically mixed both kinds together. Don't know if anybody tried that out before but I definitely will!

Just so you know... the nougat idea was totally off... in Germany, where Toffifee is from, nougat refers to Gianduja, which is basically roasted hazelnut with sugar and sometimes cocoa. It's basically Nutella in a harder consistency. Do not expect this recipe to turn out tasting like the real thing.

You mixed up the different nougats there are Barry. Toffifee is made with brown nougat which is basically roasted hazelnuts with cocoa butter and chocolate. You used white nougat, also known as Nougat Montélimar. This nougat is made by whipping egg whites, sugar and honey together.

I work in a hotel, and I've seen chefs put food wrapped in cling film in to 180*C ovens without it melting, so that temperature would be fine.

I really wish he hadn’t have put the Toffifee on the kitchen towel. It’s going to get covered in tiny hairs & fabric, he even said it got stuck to the towel at the end. Also next time if you oil or rub butter inside the bowl before you put the cling film in then it’ll come out much easier. 👍🏼

Barry, maybe try to just caramelize the sugar and water first while washing the sides of the pan down with water (on a pastry brush) so it doesn't crystalize... Then add the cream and butter slowly...

I've been a chef for 16 years. I have never had any of my Commis chefs (trainee) burn caramel that often haha!! You don't need thermometers, use your eyes. When it gets to a very light brown, take it off the heat immediately. The remaining temperature within the sugar liquid will finish off the cooking. Also, don't stir it until adding butter!!

Why are you mixing french nougat with nutella, and not just using wiener nougat? It's a German snack, using german nougat, wich is very different than the french kind... Not complaining, i'm sure it's great, but they are two different things, it would be like using white chocolate, and then turning it brown, instead of just using regular brown chocolate... it might turn out good, but just... why?

So a couple reasons why your caramel went wrong the first few times 1. you're not supposed to stir the sugar once its on the heat with the water in it. 2.the cream shouldn't go in until after the sugar has been taken off the heat (shortly before or at the same time as the butter) 3. although you figured this one out, heat usually too much! hope this helps (hard to explain over text sorry Barry)

Quick tip for cutting the base of a circle pan or cake tin you fold the backing paper into quarters the fold into a cone shape the put the pointy edge in the middle of the pan and cut around the edge and it creates a circle the perfect size!

The "nougat" in Toffifee is something completly different than white nougat with nutella. It is made purley from nuts, some sugar and cacao. The one in Toffifee is made from hazelnut, but it can be made from almonds, too. But then it will be more of a beige color.

maybe people have told you but a good way to save your pots when making caramel is to get a wide pain brush or pastry brush and wet the sides of your pot. keeps that mess from getting too crazy on the sides
