材料 :
鸡肉 1/2 只 大约 800 - 1000g
腌制:
盐 少许
黄姜粉 1/2 茶匙
豆腐
天贝
香料:
辣椒干 15-20 条
小葱头 2 粒
红葱 1 粒
南姜 1小块
生姜 1 小块
蒜头 2 粒
调味 :
蚝油

马六甲椰糖
白糖
黄姜饭:
香米 200mL
水 250mL
盐 少许
香茅 1 支
姜 1 小块
香油
椰浆
其他材料 :
豆腐
天贝
Ingredients (Diana)
1. Half Chicken ~800-1000g cut smaller pieces. Marinate with little salt and 1/2tsp turmeric powder
2. Tempeh cut smaller
3. Bean curd 3pcs cut into triangular pieces
4. Tamarind paste with half bowl water. Squeeze and filter to get the juice
Blended ingredients
1. Dried chilli 15-20pcs remove seeds and soak in hot water for 5min
2. Shallots 2 cloves cut slice
3. Red onion 1pc cut thicker slice
4. Galangal small piece cut slice
5. Ginger small piece cut slice
6. Garlic 2 cloves cut half
7. Little water
Seasoning
1. Oyster sauce 1/2tbsp
2. Salt little
3. Gula Melaka few small pieces
4. Sugar 2tsp
Turmeric rice ingredients
1. Rice grain 200ml
2. Water 250ml
3. Salt little
4. Lemongrass 1pc flatten and cut half
5. Ginger small piece smashed
6. Fragrant oil little
7. Coconut milk 1tbsp
Method
1. Wash rice and set aside. Mix the water, salt and turmeric powder in a bowl and add to the rice. Add in lemongrass, ginger and fragrant oil. Mix and cook the rice. Once cooked, add coconut milk and mix well. Keep warm.
2. Blend all the ingredients except red onion
3. Deep fry the tempeh and bean curds. Set aside
4. With some balance oil, stir fry the chicken and set aside
5. Add in red onion and stir fry till fragrant. Add in blended ingredients and stir till oil is extracted using medium low heat
6. Add Gula Melaka and stir till dissolved. Add salt, sugar, oyster sauce and mix well
7. Add chicken and mix well. Add tamarind juice and let it boil. Then turn to low heat and simmer for 2min. Open lid and stir till gravy has thickened.
8. Arrange the turmeric rice, chicken, tempeh, bean curd, hard boil egg and pickle veg on a plate with banana leaf.
9. Serve and enjoy! 💕

Hi there, malay usually cook ayam masak merah using various way, for example, you can use tamarind sauce ( assam jawa ), tomato puree or tomato sauce. Th3 idea is to get a bit of souness to balance the taste.

#阿鸿的食谱 #香辣鸡套餐 #AyamMasakMerahWithTurmericRice kzbin.info/www/bejne/aHbQaXx5orCiadk Ingredients (Diana) 1. Half Chicken ~800-1000g cut smaller pieces. Marinate with little salt and 1/2tsp turmeric powder 2. Tempeh cut smaller 3. Bean curd 3pcs cut into triangular pieces 4. Tamarind paste with half bowl water. Squeeze and filter to get the juice Blended ingredients 1. Dried chilli 15-20pcs remove seeds and soak in hot water for 5min 2. Shallots 2 cloves cut slice 3. Red onion 1pc cut thicker slice 4. Galangal small piece cut slice 5. Ginger small piece cut slice 6. Garlic 2 cloves cut half 7. Little water Seasoning 1. Oyster sauce 1/2tbsp 2. Salt little 3. Gula Melaka few small pieces 4. Sugar 2tsp Turmeric rice ingredients 1. Rice grain 200ml 2. Water 250ml 3. Salt little 4. Lemongrass 1pc flatten and cut half 5. Ginger small piece smashed 6. Fragrant oil little 7. Coconut milk 1tbsp Method 1. Wash rice and set aside. Mix the water, salt and turmeric powder in a bowl and add to the rice. Add in lemongrass, ginger and fragrant oil. Mix and cook the rice. Once cooked, add coconut milk and mix well. Keep warm. 2. Blend all the ingredients except red onion 3. Deep fry the tempeh and bean curds. Set aside 4. With some balance oil, stir fry the chicken and set aside 5. Add in red onion and stir fry till fragrant. Add in blended ingredients and stir till oil is extracted using medium low heat 6. Add Gula Melaka and stir till dissolved. Add salt, sugar, oyster sauce and mix well 7. Add chicken and mix well. Add tamarind juice and let it boil. Then turn to low heat and simmer for 2min. Open lid and stir till gravy has thickened. 8. Arrange the turmeric rice, chicken, tempeh, bean curd, hard boil egg and pickle veg on a plate with banana leaf. 9.
