I season the meat with taco seasoning, use Doritos instead of regular tortilla chips, use Mexican velveeta and hot rotel tomatoes and add a can of diced green chilis

To level it up I use chorizo…… I use cilantro, diced Roma tomatoes ,onion ,some diced jalapeño or Serrano and chili powder and cumin 😋 so good

I’ve seen & read that if you’ve ever noticed your “homemade” tortilla chips only staying crispy for a short amount of time & then getting rubbery that means there’s too much moisture in the tortilla’s prior to frying. You may need to first dry them out a bit in the oven @ 200 degree’s for a few minutes, then do the deep fry. Supposedly this keeps the chips freshly crunchy for much longer.

The only thing I would do different would be to add the Goya ingredients into a blender and add 1 Tbs of Olive Oil and 1/4 cup of beef stock and blend until smooth. I would then add that to the dip mixture.

I make mine almost the same way except I use Kroger brand jalapeño cheese it’s like Valletta but better. I use hot sausage also but add a can diced chilies and can of jalapeños. I put everything in my crockpot and WOW IS IT GOOD!!

Love this recipe and can't wait to try it! Here's a tip - The Chipotle peppers that are not used can be blended down - You have to really blend the peppers and/or strain them to keep the skins out. (Unless you're making a big batch, you won't need the whole can of peppers - they can get very spicy) add olive oil, honey, salt, pepper, oregano, red wine vinegar and a splash of lime - you've got one great salad dressing!! Kinda a Chipotle salad dressing copy cat.

Instead of "wet" lime juice, try some Tajin dry seasoning... it is like "dry" lime sprinkles. Awesome flavor.

@@olripper2700 I am familiar with Tajin. Still prefer straight lime juice. When the chips are still very hot it sizzles and doesn't "wet" the tortillas. Also a little goes a long way. I lightly sprinkle not soak.

I’ve been making it similar to this for years lol. I use small Mexican velveta and large original 1 cream cheese and heavy cream along with same seasoning and spicy jimmy dean sausage and rotel 2 cans 1 drained all in a lined crockpot. If in a real pinch can use jimmy dean precooked crumbles

Mine is rather plain comparatively but I use 1 lb of hot sausage and only one Velveeta. No other cheese. But I then use two cans of rotel. Sometimes three. I love the thinner dip and the extra tomatoes.

The seasoning blend he used is the exact same as what is in taco seasoning. He basically blended his own homemade taco seasoning. Paprika, chili powder, salt, pepper, garlic powder, onion powder and cumin are standard in every pre-packaged taco seasonings on the market. If I made this myself I’d probably go that route as well because it’s faster and easier than pulling down each seasoning bottle.

Have you tried adding sodium citrate to tie-up the casein in the cheese? I use it when I expect leftovers. Makes reheating as smooth as the original. Even recipes with just parmesan, cheddar, etc. spill out smooth, and re-heat smooth. No curdling.

For my rotel dip, I use Jimmy Dean Hot Sausage, Queso Blanco Velveeta (or Regular if they don't have the Queso Blanco), Hot Rotel, Cream Cheese, and Sweet Corn. I have a 7qt Crock Pot that I make mine in, so I use 3 things of Sausage, 2 Blocks of Queso Blanco Velveeta, 1 Block of Cream Cheese, 2-3 cans of Rotel (or 1 big can if they have it), 2 cans of Sweet Corn, plus I like to put it in the fridge for leftovers. Note: The Sweet Corn sounds weird to put in a Rotel Dip...but it's actually very good, gives it a slight sweetness to the already salty cheeses and sausage. I also only put Cayenne Pepper and Garlic Powder when browning my sausage since it already has salt in the meat.
