If you watch any of his shows where he travels around he always goes out of his way to speak to the local chefs, both celebrity restaurant chefs and the street food vendors, he tries their food, learns from them, helps them in their kitchens etc. so it's clear he actually wants to learn how to do things authentically first before he put his own spin on it, that's the mark of a chef who's not only good at what he does, but humble enough to recognise there's always so much more for him to learn
