I absolutely think he was genuinely upset at that! My kids (all half Thai and living in Sydney) sent me a video of my son removing some broccoli from his meal - when I commented that he was, as usual, taking the vegetables out, he replied simply "Broccoli does not belong in tom yum. I'm leaving it out to protest."... and that just made me laugh... we often laugh at "farang" (foreigner) ways of making their western versions of "Thai" food.

Thai here, I remember about 4 years ago I was eating dinner with my grandparents while we were watching TV. Then, Jamie Oliver's show came up. He show how to cook an asian dish( I forgot what it is) and my grandparents were so annoyed and angry that I had to turned the TV off LOL. Back then I was young and don't really understand, but now I know why.

As a Thai person, I'm in literal pain. I can excuse the small amount of green chilies because we all have different spice tolerance levels but the mushroom and the peas are just oof... Also if you want the green color without the spiciness just use less chilis and more basil. Pound them real fine, too, don't leave them chunky like Jamie's curry paste there.

In my mum's recipe, we put at least 8-10 chillis no matter what's the colour. And crush all salt white pepper galangal chilli and a little shrimp paste together then season with sugar (brown sugar or traditional jaggery) She will cook a fatty coconut milk with all paste until it's going hot. Put some beef or pork + some a little hot water. Cook it for a while until a meat is done. Then season with fish sauce and serve. I miss my mum so bad now.

I just bought a frozen Amy’s Kitchen vegan Thai Green Curry meal a few days ago. I don’t eat meat or fish and am allergic to egg and dairy, so let’s not start a fight about it being vegan. I also don’t cook, so no argument about frozen package. I know what Thai means but I have no idea what green curry is or Thai cuisine in general, being of Irish extraction with no knowledge of Irish cuisine either (although my mother gave us green water on St. Patrick’s Day) So it will be an adventure. Probably a completely inauthentic adventure, but hopefully tasty enough. Perhaps the phrase “Thai green curry-like” would work, or “homage to Thai green curry” or “vaguely resembling Thai green curry” or “based on a comment by a German about Thai green curry.”

Prepackaged food are usually quite good here in Asia. If you serve them in restaurants with nice plating most customers would not notice. I wouldn't trust a Western brand to make proper Asian prepackaged food though.

My Thai neighbour taught me to place your (arched) hand almost flat on top of the washed rice and pour enough water to just cover to your knuckle - Heavy lid/towel and turn off the heat when you can't hear the water boiling anymore. Best technique I've had for fluffy rice!

@@dink7458 My mother's family is Italian. Spaghetti bolognese isn't actually an Italian dish. They rarely add meat to pasta. Seafood with spaghetti is common, but adding beef or chicken, mince or meatballs, this isn't Italian. Some people might eat tagliatelle with ragu which is made by cooking already cooked casserole meat in the sauce until it disintegrates, but it looks nothing like bolognese.

This is why I like Ramsey, he doesn't just cook things by looking stuff online or something, he literally goes to the country and learns from the people. He did an amazing job in India. After Gordon Ramsay’s Pad Thai video, he improved his Thai cooking, at least he went around the country to learn our cooking tradition but this guy, Jamie, most of his Asian dishes still look like puke to me… I’m crying, my ancestors are crying. As Thai, this is not green curry. This is not like adapted recipe for foreigner who cannot find the ingredients. Hai-yah I meant by just watching this video, you can already tell that taste and smell are not even close to the real green curry. For anyone who love to see the correct recipe, I would recommend Pailin Hot kitchen’s channel too. She is Thai, speak in English perfectly, very easy to follow. Since she lives somewhere away from Thailand, she also has a good sense about what you can use as substitute for rare/tropical ingredients

(12:34) The accent is part of the comedy, like Larry the Cable Guy (who's actually from Nebraska and has a neutral accent) or Gedde Watanabe (Long Duk Dong in "Sixteen Candles", really Gary Watanabe from Ogden, Utah.)

As a Thai myself eating Thai Green Curry right now, I feel your pain. This is just British green soup, it's not how Thai Green Curry is. สำหรับคนไทยอย่างผมกินแกงเขียวหวานตอนนี้ ฉันรู้สึกถึงความเจ็บปวดของคุณจริงๆ นี่คือซุปเขียวอังกฤษ ไม่ใช่แกงเขียวหวาน Just a side note, mushrooms may not be found on Thai Green (or red) Curry, but it's found in Tom Yum, the mushrooms is the correct ingredient for that, not the Green Curry. ขอจดโน้ตอีก เห็ดอาจจะไม่พบในแกงเขียวหวาน(หรือแกงเผ็ด)ก็ตาม แต่มันพบในต้มยำ ซึ่งเห็ดเป็นวัตถุดิบที่ถูกในแกงนี้หละครับ ไม่ใช่แกงเขียวหวาน

My kids got me into Uncle Roger. I've been in Asia 23 or so years. If you are Western and wondering if he's exaggerating about how badly these dishes are being made. Nope. These dishes are as common as chicken soup out here. This is food regular people cook here, how they get them so wrong is a mystery. Keep it up Uncle

There are worse things. At some point in my school years ago we had a week to work as interns, which I kept ignoring until I had to take one as a cook. I was in a restaurant where they produced some things en masse beforehand and kept it in one of their freezing rooms and replacing 70 Liter of produce or more can be pricey. They fucked up I believe it was a mint pesto by cooking it way too hot destroying the chlorophyll in the process and to avoid punishment they did something crazy. It looked like grey sludge at that point so they put in woodruff syrup to get the green color back and then added more ingredients until they couldn't taste the syrup anymore. The funny thing is they somehow got away with it, without anyone noticing it. woodruff syrup (= "Waldmeistersirup" is a vivid green colored concentrate for fizzy drinks and cocktails and has a unique and pretty intense flavor)

It feels like he added all those additional vegetables and the mushrooms in with the cooking of the chicken because on some level. When he first cooked it as a test before the video. He noticed there wasn't enough food. So instead of going, 'I need more rice,' 'more chicken,' or even "my curry doesn't look like curry." But instead of going looking for a video on how to make curry, and then going. "Oh I need to mix my chopped spices and vegetables into the milk first, then pour in/on my chicken." He just added more to bulk up the meal, so it looks fuller.
