Glad you enjoyed it Marilynne. Now you're bringing back memories, I've not been back to the UK for about 25 years but I'm from a Gypsy family (Petulengro) and a lot of my relatives are settled in Blackpool telling fortunes there.

@@MrPaulsPantry before I read further in your message, as soon as I saw Petulengro I instantly thought Eva Petulengro telling fortunes on the front at Blackpool. Our late father was the pianist at Blackpool Tower circus in the late fifties so we know all about the golden mile 😁😁😁

we have these cookies in Macedonia and they are called "parachotes". they stick two together and between them, they put a filling ( egg white whipped with sherbet, very thick, gooey filling, like when you whip egg whites for a meringue cookies. delicious!!! thank you so much for the recipe, i never knew how they were made. i will make them soon

Go for it Susan, just make sure you pipe a good amount on sheet, they must be about as tall as they are wide, to get the correct shape when baked. Any problems do get back to me anytime. Mr. Paul, just an update on my attempt to make these cookies. They were a success! The family asked where I bought them and I said I made them. They didn't believe me until i should them your recipe. They went through all your sweet treats and want me to make the millionaire shortbread cookies.

Yes, I found it a big help, even our commercial machines in the bakery had to be scraped down by hand during the creaming process.

Are these macaroons chewy in the middle?

Yes they are but if you cook on a lower heat and little longer they will not be chewy.

NO because this ingredient is to give some texture, rice flour has none. Semolina (Semolia) is available in the supermarkets in Spain

Never used it Chrissie so I don't know, sorry. If it mentions the word HORNO on the box it probably is OK
