How the boys shaped onigiri reminded me of my dear English friend whom I tried (and failed) to teach how to make onigiri many years ago. I wish I could show how to do it just by folding both hands - one to flatten sides, the other to create triangle shape. My favourite filling is cheese and bonito flakes in soy sauce - it’s an amazing fusion combo 😊

I'm pretty sure the proper way to prepare Japanese koshihikari rice (short grain/pearl) is to wash and polish (process by which you rub the grains together gently with your hands) thoroughly first, THEN soak in water. notice how when Ben pours water into the pan of rice it is still cloudy. if prepared properly, there shouldn't be much starch left and the water ought to be clear. when the rice is cooked, it should be relatively sticky but each grain is still very distinct from one another in texture.

Yup, proper way is to wash the grains gently till the water runs clear then soak in water then drain for a couple of minutes before cooking. By the way koshihikari is just one variety of Japanese rice (one of the most popular). There are actually lots of other varieties of Japanese rice. The rice section in a Japanese supermarket still overwhelms me to this day.

Agreed! The rice needs a gentle rinse cycle with hands involved before soaking. You can also eyeball the water level, as no Japanese person ever measures the water. You can do this with your fingers (Stick a finger in, up the first knuckle is the rice level, the second knuckle will be the water level) or you just make sure there's a layer of water above the rice of about the same thickness as the rice level.

A rice dish I enjoyed from a country just in Western Europe. Portugal has a rice dish called Cabidela. I think you'll enjoy researching this and Mike may even like it.

Aside from putting emphasis on the second syllable like every English speaker does naturally they're doing fine. They're reading the romanized word as they should just like everyone does with croissant, or bratwurst. Technically also you cant even romanize Japanese properly since its a non-phonetic language, that is lacking distinction between R and L so i could (completely justifiably) write it onigili and no Japanese person would be able to tell the difference in pronunciation without a pretty good English education. (lesson here is Japanese is a really strange language that is not at all easy for native English speakers.)

I'm lazy and poor so I just cook some jasmine rice. Then I grab a can of tuna and mix it with whatever I have: soy sauce, sriracha, sesame seeds, chopped nori, kewpie/mayo...Plop some over rice and bam! Your very own cheap/easy af horrible bastardization of everything that is good in the world (but that tastes good).

I don't know if I can still add to this... but if you cook sushirice in coconut milk, use mango slices for nori and strawberries for filling (or any other fruit that slices thin and holds well and any fruit that pairs well for filling) you can make a delicious sweet sort-of-sushi for dessert that looks and tastes beautiful

Just made these for the first time! It was also my first time cooking rice on the stove (not from instant in the microwave)! They turned out okay - I think I can improve my rice cooking skills and my ratio of filling to rice, because they don't hold together super well, but they taste delicious so I'm quite pleased! You guys should try the Cantonese clay pot rice (bo jai fan 煲仔飯). It's a one pot rice, so the flavours of the ingredients are mingled within the rice, together with the smokey flavour from the crispy charred rice bits at the bottom, they taste so good! Chicken and mushroom is a great combo :) ( btw greetings from Hong Kong!)

Hahahhahaha However, instead of dumping salt in the water, you should actually wet your hands and rubbing salt over them completely before shaping the onigiris! (Let the salt dissolve on the wet hands, it's fineeee) This method is the best when you're making plain onigiri, adding a slight saltiness to the sweet rice :)

First off love the show and I will be trying the mushroom onigiri very soon! When I make my rice (always Japanese med-short grain like mama made) I have learned you get better al-dente texture if you add the salt after you cook the rice in fresh water

Mates, here's an awesome recommendation for onigiri. Katsuobushi (bonito flakes) in a few dashes of soy sauce. Dice a mango and sprinkle a dash of cayenne pepper. Take those ingredients and put them into your ball and form the triangle shape with a rectangle shape of nori dry seaweed. Proper good!

and then you could also grill the onigiri XD But i also like to add sushi vinegar in my onigiri rice lol Also... Sushi = raw fish or some sort of topping placed ontop of/covering rice Maki = rice roll in the shape of a tube with seaweed sashimi = plain raw fish onigiri (noun)= "nigiri" means to squeeze the 'o' is just the article so it's rice that's squeezed into shape (you also nigiri [action verb] the rice for sushi to make it into a bite sized clump) at least that's how i differentiate them XD

Over the years of watching your videos you've given me a fair share of laughs and saliva drooling down my face, but there was always one thing that has caused me pain: the way you cook rice. Yes, throwing your rice in a large pot of boiling water and then straining it has caused me nightmares. Today's video was the first time you have cooked rice the correct way without a rice cooker, and so I shall have no more nightmares anymore as I will be dreaming of countless sheep with Barry's face saying "Rice needs time and love and respect". I always make seasoned sushi rice when making Onigiri & Onigirazu. I love making Korean inspired versions, but when making a whole bunch for some friends, at a friends request I made some Mexican inspired Chipotle Beef Onigirazu, and it turned out amazing!

Well Korea has their own "onigiri" called Sam Gap Kimbap. It's different since they don't season their rice and the fillings are different. I get them by the corner store all the time ^_^

Kudos on shaping them into triangles without a mould! I have a triangle mould I usually use which makes it more efficient (or is meant to at least). Question: are there many Japanese restaurants in England? In Sydney, there's usually at least 2 sushi shops in local suburbs. Just interested in the spread of cuisines in each country...

did you know! there has been a boom lately (the last couple of years) in onigirazu which are even more sandwich-like onigiri, think a square rice bun burger. not grilled, wrapped in nori. the shops even started selling nori specifically for onigirazu. check it out!

You guys should try making Khichdi, it's a basic Indian dish made with rice and yellow lentils and often eaten with mango or lemon pickels. Also eaten with a bottle gourd soup "Palidu". It's a simple recipe and super tasty...
