This video made me cry. It reminded me so much of my Nani cooking and showing me how to do things. She was very similar to your mum in how she spoke and how she did the rice with her hands. I wish she was still here to teach me how to cook. The biryani looks absolutely delicious.

My local restaurant serves their biryani with a yoghurt, cucumber, and yellow lentil raita. and without it, the biryani is *NOT* the same. I've been patiently waiting for you to post a recipe, since Biryani seems as diverse in Indian cooking as Italian's "grandma's tomato gravy". Thanks much for this.

Dear Chetna, my dad told me that when he was a young man in England (he's 79 now!) he had the best chicken biryani he's ever tasted, but he's never found one to match it since. He told me what this - obviously very memorable - biryani was like and, apart from the chopped hard boiled eggs that were in it, it sounds very like your mother's recipe and I think he would go absolutely ga ga over it..So I'm going to make it for him. ( I'll try it out on my own family first though!) I really love your channel, you're a lovely woman - so warm and friendly. Actually, I love your whole immediate family, your mum and your gorgeous children. Thank you so much for the video Chetna. What I like of Indian food is that You are not forced to stick with exotic ingredients. You just have to get all those spices just once in an Indian or Asian food shop, but all other stuff can easily purchased in virtually every supermarket.

We love Biryani! Love the variations in ingredients and flavours. Glen's Grandmother (his fathers family lived in India for 200+ years before coming to Canada) made an amazing Biryani that we just can't seem to replicate. We keep talking about doing his families Indian recipes on our channel... but two "white Canadians" might draw the ire of the internet.

I tried this recipe today and while I’ve tried other biryani recipes before, I really liked the result of this one! This is the first one that has me doing the whole recipe on stovetop... the flavors are slightly different with the use of mint and the drop of rose water, but I really liked it. Will try this again. Every recipe of yours that I’ve tried has worked, so thank you!

Hi Chetna! Love your channel. Question: why do many recipes ask for garam masala powder when whole garam masalas have already been added at the beginning? I prefer the flavors of the whole spices a lot more, I wonder if I can just use more whole spices or if the powdered garam masala actually add a different flavor. Thanks!

Vince Li In general, whole spices are used at the beginning to flavour the oil which then spreads evenly throughout the final dish. It also brings out a different flavour from the spices, similar to toasting spices dry. If powdered spices were used at the beginning they may burn. Garam masala powder is added towards the end of recipes because it brings out the fresh aroma of the spices. This is especially noticeable in rice dishes (probably because of the steam created). For biriyani, everyone uses both

The final bit is the layering of chicken and rice in a pan and then cooked over another layer so that the rice does not burn and also it cooks the dish very very slowly which all adds to the flavour.
