This is a veggie chow mein recipe. I'm using the old style Farkay noodles but you can use any kind of noodles that you like.

MUSHROOM CHOW MEIN RECIPE
2 to 3 cup cremini mushrooms (or use other kinds of mushrooms)
1 teaspoon chopped ginger
1 teaspoon teaspoon chopper garlic
3 tablespoons peanut oil (or other cooking oil)
1/2 cup sliced celery
1/2 cup sliced onions1 to 1 1/2 cups chicken stock (or use water with 1 tablespoon
chicken soup base
2 to 3 tablespoons tamari or regular light soy sauce
1 to 2 tablespoon maggi sauce (or use other sauce, such as Chinese oyster sauce
1 tablespoon cornstarch + 1/3 cup water
Cook noodles according to instructions. For this recipe I'm using the old style farcay noodles but you can use your favorite noodles. For the farkay noodles, I bring a pot of water to a boil. Add salt and cooking oil. The farkay noodles only need to be boiled for 5 minutes.
To grill the noodles, preheat your pan or wok. Add cooking oil. I cook my noodles in 2 batches. Cook noodles to desired crispiness. I like noodles that are extra crispy.
Preheat your wok or frying pan at medium high to high heat. Add cooking oil. Then add ginger and garlic. Briefly stir fry. Add other aromatics, such as celery and onions.
Add mushrooms and stir fry for a minute or two. Add chicken broth, soy sauce, maggi sauce and bring to a boil. Mix the cornstarch with water to make a slurry. Add slurry to thicken the sauce.
Set the noodles on a large, nice plate. Pour the stir fried muscles over the noodles. Enjoy!
