Thanks for the recipe! While i don't remember my mother's chop suey recipe (they also owned a cafe back in the day), i recollect it being slightly tangy, and a little bit of carrots (and it also had bean sprouts). Will give your recipe a shot to see if it's similar to my mom's old recipe.

That was a sweet story at the end. Do you have more vivid memories of your parents and grandparents when you make and eat this dish? Because I think everybody has a story like that where some cooking and eating of a specific food makes the past feel present again.

I grew up in Milwaukee in the 80s/90s. We used to be served chop suey like this in our school cafeteria. It was made with ground pork instead of chicken. It was really good and I miss it. thanks for the recipe. I will make this with the ground pork for my kids. What happened to Bill Sook?

So this chop suey survived into the 90's. I think in our area it became extinct even earlier. I worked under Bill Sook in a restaurant when I was young. The boss's son took this picture. Thanks for checking out my video.

Yes, so many dishes such as this chop suey has disappeared from Chinese restaurant menus. Acrually we had 1 more brother after. I just talked to my mom about this story and she can't remember anything about it. I'm thinking it might be us running around upstairs with the baby buggy as fire patrol making a lot of noise. Thank you for the demo, very informative! What I didn't see was where the thigh went or how it's cut in the first half?

Good question. In the first half, the thigh wasn't separated from the carcass of the chicken. When the chicken was quartered length wise, the thigh was still there and were the first few pieces cut at the start. I usually cut a chicken using the second half method but I see some people cut it fthe first half way. Thanks for your question. We're all looking for ways to stretch our food budget these days, given the cost of groceries.. Man alive, it's ridiculous. It's such an obvious thing to grab a roast chicken and use it in so many ways.. Yet somehow I never thought of it! : ) Great ideas.. Great series of videos. Ha ha. Grabbing free samples is one of my pleasures of life. If I'm still hungry, I'll grab a $1.50 hot dog. Even their hot dog has been affected by inflation. It uaed to include all you can eat sauerkraut. Then it was a thimble of sauerkraut by request. Now there is no sauerkraut served with the hot dog. Thanks for checking out my video. This looks like a American/Canadian Chinese dish. Which doesn't make it bad. It actually looks pretty good. The preparation before adding in the noodles is like a "chop suey". Will try this.

Yes, old style North American chop suey. My grandfather's restaurant served the veggies as chop suey and adding noodles it became chow mein. Back then, they didn't have a great variety of vegetables so they used mostly nappa cabbage. Sometimes they used canned bamboo shoots and other ingredients. Thanks for checking out my video.

Question about a NEW wok. Do you "season" the outside also w/oil so it doesn't rust?

I don't season the outside because if there's a bit of rust, I'm not concerned because I'm not eating off it. When I notice a bit of rust, I just take a napkin with a tablespoon of cooking oil and wipe out the rust. Thanks for checking out my video. Happy cooking.

Our last old style restaurant closed. I think a lot of folks are retiring and the kids aren't carrying on. We still have some "new" Chinese restaurants but I miss some of the old comfort foods. Good video, thanks

Thank you for showing us how to prepare this delicious classic. None of the restaurants seem to offer Chicken Chow Mein Old Style or Wor Sue Gai/Almond Boneless Chicken anymore. I wish more restaurants would bring back these older great dishes.

I agree. I would gladly eat it in a Chinese restaurant but since I can't find it anywhere, every once in a while I have to make it when I have a craving for it. I'm not sure if you asked me to make the Wor Sue duck with almonds. I did inquire around in some old style Chinese restaurants but no one has heard of it.
