Steaming the noodles will maintain the firmness, just dunk in water after steamed and then stir fry… Alternatively, you can buy pre-steamed egg noodles at some markets…

This looks almost identical to the stuff I get from my favorite Asian restaurant (it used to be just Chinese but starting about 10 years ago they started doing pho, pad Thai, and other stuff too) and I’ve always been happy to get it from them because they’re a wonderful family, but now I live over 40 miles away and it’s just not practical to go that far lately so thank you for this wonderful recipe.

We are on our way home in our RV (camper) and I needed to use up some food from the freezer so I turned to you for inspiration. I had frozen salmon, broccoli, red bell pepper, and onion. Also, frozen vermicelli. Well, the salmon and noodles got a but mushy but the veggies were crisp. I made the sauce to your recipe (even MSG) and it was DELICIOUS!! I bought your cookbook and had it sent home. We will be there tomorrow and I plan on making EVERYTHING in your cookbook! We love your channel. Please say hello to Claire and yummmm. So good. Ok. I made this tonite. It took me 2 hours from start till served on the table, tho. I am not a good chopper. So that took extra time. I even used a bagged cole slaw for the cabbage and precut carrots! I am in the USA, so I had to look up conversions from grams, as well. And I am soy-free, and refined sugar-free. My Subs: Agave/Maple Syrup vs granulated sugar Coconut Aminos vs Soy Sauce Found a Soy-free Oyster Sauce. Mirin vs the Wine. But this was VERY GOOD! I did have to add extra salt during eating it, however. But this recipe is definitely a keeper!! Thank You! 🙂

Thank you Aaron & Claire. I made this recipe and it is delicious. The cabbage definitely is a good addition - it bulks it up and adds a nice flavor with no calories. I also used angel hair pasta instead of Chinese noodles and it worked perfectly, as you said it would. Thanks again!

I really like using those dried egg noodles. They also come in a shrimp flavour which is really great for soup noodles with wontons. Also totally agree about using spaghetti as an option for noodle stir fries - works really well!

I haven’t yet tried this but I will as I love Chow Mein. Tip for others that I figured out: For sauce recipes like this that have no ingredients that will go bad in the fridge you can double/triple the sauce and store the rest in the fridge for next week or maybe day 😂 You can also do some food prep once a week. Sometimes I do that so I already have washed/cut vegetables in the fridge. It really cuts down on the time especially if you have food prepped the vegetables.

Hats off to you I followed your recipe to the exact instructions I just didn’t have the wine everything else I had and l want to say that it was the best chowmein my daughter ever had she doesn’t eat a lot of pasta but she loves her veggies I prepared the veggies chicken and the noodles the night before I just made the sauce in the morning I followed the directions how to cook everything and I packed it for her lunch she send a text telling me that it was SO GOOD she wanted the same thing for the next day lunch I was so happy she enjoyed it and it was a win win I don’t have to cook tomorrow morning thank you for sharing your recipes you are the best chef no wonder Claire loves to be the taster 😂 you are the best 😊 love all your recipes

I made this. It was amazing. I used what vegi had (mushrooms, peppers and onion and added a tiny bit of ginger and didn't have any egg white. Other than that I followed the recipe exactly and it was amazingly good . Thank you.

Thanks for the tip about frying the noodles a bit. I noticed that you didn’t use ginger. I normally sauté minced ginger with the garlic and onions.

Okaaay! I made this dish vegetarian style! Kind of. I still used the oyster sauce because we eat fish, but we subbed the chicken for tofu. It was a hit! Here are the details: 1) we used the lo mien egg noodles. We cooled them down after boil. Excellent advice. Made the difference. 2) we used tofu instead of chicken, but used the same chicken marinade. Marinade was great. 3) we cooked the tofu in the wok with oil, but the crispy goodness stuck to the wok instead of on the tofu. I wonder if it would have worked better at a lower temp. 4) we pulled the tofu from the wok before it got too messy and put it in the oven at 400 degrees for 24 minutes, flipping at 12 minutes. Tofu was perfect. 5) we followed everything else in the directions to the end. (We didn’t have dark soy sauce and subbed rice vinegar in for the mirin) Final thoughts: I understand that animal fat adds amazing flavor to most any dish, but if you aren’t into eating meat all of the flavors still work really well together. I am a big fan of Aaron and Claire and cannot wait to get my cookbook come December.
