When I visited my family in Iraq back in the summer of 1980, one afternoon I observed my grandmother making watermelon rind jam from scratch. Everything she made was from scratch. I was able to quickly lose the freshman 15 I gained from my first year of college before that visit simply by spending the summer there and enjoying my grandmothers home made food with lots of fruits and vegetables. Bye the way, the jam was delicious!

My digestive system had been problematic for a long time and finally I became blocked and perforated. I came home from the hospital in 2022 with an ostomy. NOW, I can eat pretty much anything w/o blockage! Since regaining muscle control, balance, and stamina, I've become much more attuned to what I eat. I'm grateful for all the help I've received from all the health care professionals that have been so positive and helpful. I haven't eaten meat or sugar or simple carbs (for the most part) in 7 months. No processed food either. I walk every day, drink lots of water, and eat lots of produce. Things are much better in the digestive department! No meds for anything! I'm 76 and going strong, if not a little pompous about it.

@@dyskover I am going through a continuous bout of diverticulitis and am in my mid 60s. I have been a vegetarian for 53 years. I just go home from 11 days in the hospital. The nurses were great but the Drs really don't know much. I am home and still in pain. Been going on for 3 months and I have been treated with every antibiotic and opioids. I don't drink alcohol, or sugar or processed foods. I have to still wait till Oct. for a colonoscopy. I have lost 30 lbs cuz I am in pain when I eat. The worst part is the anxiety cuz I know the gut brain connection is real. I am doing everything to keep myself calm. I don't know how you lived thru it.

@@marthasimons7940 That you've been a vegetarian for most of your life and still are having such a problem is kind of surprising to me. I wonder if you've had surgery? I know that the first time I was in the ICU with a blockage I should have been more amenable to an operation, but I hung in there with anti-biotics and finally walked out of the hospital. The next time, 11 yrs later, I was too far gone physically and it took me months to rehab my musculature, balance, even my hearing had suffered but has recovered since re-routing my colon and eliminating part of it. I wish you well.

Jackfruit is much easier to open when u firstly smear cooking oil onto your knife to avoid the sap from sticking to it. Besides the sweet pods, u can also eat the seeds by first boiling it with a little salt with the skin on. Once boiled, use a knife to peel off the tough skin. The boiled seed is eaten as is or with your salad. Enjoy.

They are amazing. Make sure to oil your knife and use gloves or oil your hands as well. Of course, spread out some old newspapers or any old flyers on the counter before cutting jackfruit. It contains sticky sap which is a pain to remove. However the fruit is absolutely delicious and worth all that pain. Edit: don’t throw away the seeds. Wash them and let them dry out on the counter. Remove the dry skin that forms and roast the seeds. They are amazing as well.

There's a smaller version of jackfruit called cempedak, in South-East Asia, like Thailand, Malaysia, etc, that tastes even better. If we were lucky, the local goreng pisang (fried banana) stall would have it.

Eating more fruit is what I need for bowel health. Thank you for showing us how to purchase, cut, cook, eat, and store the jackfruit. How much is the fiber’s fruit reduced after cooking? For instance, eating a fresh apple gives me a tummy ache, but I can easily processed a baked apple (no sugar).

My doctor found a pre cancerous cyst on my pancreas. It really scares me. Sad that something medically has to happen before most of us take action with their health. Well better late than never. I'm eating beans everyday. I put all the color peppers in it along with onions. My digestive system is full of inflammation. I'm hoping the cyst is smaller when I go back to the doctor in months. No more meat and more beans, fruits and veggies.

I tend to have my fruits around breakfast or between meals. I always wondered if it was okay to eat fruit after a meal that was high in protein, fats as well as starch. What do you think? For example, would it be okay to have fruit right after a grain bowl, that has tofu, legumes, steamed greens, and an avocado slice? I just feel like the fruit should be eaten at the beginning of a meal due to the fact it digests quickly or on is own a not with any meals (other then breakfast oatmeal). I would love to learn your thoughts on that. Thank you.
