You could use a deep casserole or Pyrex Carol, but I have to say the clay pot does make it taste unique.

What a delicious recipe and dish, Pete! We have a clay pot like that so I think I'll give it a try. Love one pot meals. All those ingredients in it looked so good, I'm sure they went well together for a great flavor.

The flavour was very good Rivet, but there are a few changes I would make next time, like marinating the meat and using pepperoni which is a better substitute for Chinese sausage in my opinion.

An ordinary deep Pyrex dish and lid would get the job done Sheila, but there's something about a clay pot that makes the flavours pop! Enjoy.

Just ordered a clay roaster so I can make this. By the way, my wife is allergic to shellfish so I use a "vegetarian oyster sauce" from Kimlan that is made from mushrooms.

You're in for a treat Paul! I suggest you marinate the chicken in the garlic and sauces in advance for at least two hours, I will do so next time I cook this. Although tasty, English sausages are a poor substitute, so if you can't find Chinese sausages maybe a few slices of pepperoni instead. The Kimlan sauce sounds like a good alternative 😋

The taste was great so I will certainly make this again, but I will marinate the chicken in advance for at least two hours on future occasions. Also, British sausages are a poor substitute for Chinese sausages in this dish, so I would just omit them in future if I couldn't source Chinese sausages.

@@Maplecook I think Chinese sausages are an acquired taste, I didn't care for them much at first tasting. Pepperoni slices may be a decent alternative too.

@@LazyCookPete Yeah, I'm not trying to poo poo on anyone's likings. I'm just saying that they aren't for me. I like a lot of Chinese foods, but I also can't stand a lot of them. Sausages...salted/dried fish...durians (Even though I know that durians are not only consumed by the Chinese, I include them here, because I know lots of Chinese people who like them.) and a lot of other things like this, I find absolutely repulsive. I may be in the minority, and that's okay.

@@Maplecook I know you're not, I reckon you're way too broad-minded to be of that opinion. Travel broadens the mind, so the well-travelled are usually broad-minded. Durian is okay once you get it past your nose, and like you there are a few things in the world of food I wouldn't bare my tonsils to 😊

I can highly recommend it mate. I will use pepperoni slices instead of English sausage, and marinate the meat for a couple of hours in the garlic and sauces next time I make it 😋
