Same as they made cheese back then, they used rennet extracted from cattle stomachs. Making junket is the same as the first stage of making cheese. It's not rocket science 🤣

@@Damselfly54315 No yogurt is a different culture, Yogurt is used to make more yogurt, not cheese or junket. Some cheeses like Indian paneer are made using citrus juice, but most western cheeses and junkets are made using rennet.

There's no suitable substitute for beef suet in my opinion, so it's well worth seeking it out. I never tried adding stock to the pudding so I can't speak to that. If you follow my recipe you should get the same results as I did. Enjoy!

My first attempt was good but not the best. My pudding bowl must be smaller shown because my pastry was too thick. I'm going to try again cutting back on the pastry recipe. Also, I found that cooking for 5 hours was better than 3. Good luck with your steak puddings!😊

In the USA there are at least three grades of molasses: First molasses (highest sugar content): lighter in colour and flavour Second molasses (slightly bitter): produced by a second boiling and sugar extraction Black-strap molasses (darkest and most robust): produced by a third boiling, with a greater concentration of minerals and a stronger flavour I'm not sure which of the above is what we call treacle.

The thigh bones or femurs of beef are generally the best available bones for marrow. Adding a teaspoon of vinegar to the bone broth will draw out more of the goodness from the bones.
