Brine/soak them in saltwater for a few hours, preferably overnight, to get the blood out of the marrow so you have nice, clean almost white looking marrow. Oh and get the butcher to saw them in half lengthwise, so you get maximum coverage when you roast them in the oven. Roast them and enjoy it on some nice, toasted bread. It’s absolutely delicious, like butter but with beef taste
