Fermentation is the most important step to make a good idli or dosa batter. This process gives you soft fluffy idli's and dosas.
I did not know about this and my first milet batter was a disaster. The batter made rock solid idli's, reminded me of hostel food.
But since I was keen on using millets regularly, I kept experimenting and finally learnt how to make the best millet batter.
Nobody would ever know that these are made from millets. I could make the softest idlis, and the crispiest masala dosa's too.
So dont worry too much if you failed the first time. Try it again. The ratio is 3 cups millet, 1 cup udad dal, 1 handful poha or cooked rice. You can grind in a mixer and leave it to ferment for 8-10 hours. It is done only after you see that the batter has rised. If you notice batter is flat, then leave it out for another 1-2 hours.

Even after following your method, my millet idli did not work.. it never cooks .. it kept boiling boiling
