RECIPE (2 servings, 10min prep time): -2 Tbsp light soy sauce -2 Tsp dark soy sauce -2 Tsp sugar -1 Tsp chili oil -1 Tsp sesame oil -a thumbsize piece of ginger -2 cloves garlic -1 scallion -4 cups (1L) noodle cooking water Mix everything -150g noodles Cook and save the water -120g tofu Fry in oil and season with soy sauce and five spice. Assemble everything in a bowl (I also topped it with Swiss chard.

Looks delicious 💚 i usually have a bunch of dried ingredients to make or add to instant ramen ( rameon , noodle soup ) ; dried penny bun powder , dried wakame powder , dried pumpking powder , etc . Also for the broth you can use miso or mayo , both delicious . And as the water is boiling you can add veggies of your choice for the ensemble . And not to forget the spring onions finely sliced as the topping with a couple pinches of sesame seeds .

I've been vegan for 15 years. I learned the hard way that it's a very unhealthy diet and it's very hard to stay nourished. I eat raw vegan for year's and now eat lots of cooked veggies. But it's hard to get enough calcium and protein. Also, processed vegan meats are very bad for you, meat is much more natural and full of nutrients and protein.also, the longer your vegan, the more likely you will become allergic to animal products. I can't breath if someone cooks meat in the same room as me. Veganism is unhealthy. But vegetables are great for you, just remember meat is important to incorporate too.

@sigal8312 everyone is different. Not all meat substitutes are bad. And since its a big lifestyle change, one shouldn't be so harsh on themselves anyway. I will say you definitely need to take supplements with a vegan diet. Protein powder is helpful if you're also trying to gain muscle too. But vegan is not unhealthy! It's great. But it isn't for everyone, and some people need to augment the diet in order for it to work for them.

Yes, it's the Asian way of cooking. Light soya sauce is the most commonly used in Asian cuisines while dark soya sauce is for the color.

Let's be real - spiced soy sauce water aint a broth. Seaame paste or blended pumpkin seeds can give a body and miso some extra flavour.

Yeah not for me. In Asia, those soup is not just "pasta water". Chicken, pork, fish, beef flavored soup that often cooked for hours and added with herb or spices. That chilli oil, soy sauce, etc are not the actual golden flavor - here, they are condiments. This is why western made "asian" noodle soup always comes out bland and salty.

Don't use the noodle cooking water ever. That has the wax coating that comes off when you boil it. Just use water or broth if you have it.
