This is probably my second if not first youtube comment I've ever written but I had to take the time to mention how rad ALL your videos are. I've been watching since well before you went full time on KZbin and I've never stayed so dedicated to a you-tuber ever before. It helps that both cooking, and travel are some of my favorite hobbies but your channel portrays both activities in your own way which is what I love about Outdoor Chef Life. The authenticity the channel embodies and passion for the outdoors is something I'm sure everyone here could agree has influenced them to focus on the simple aspects of life. I have made this trip 5 times when i was younger its been 20 plus years since ive been able to travel these long distances due to a horrible back injury. The road you took is one of my favorate trips ever. The elk you saw was awesome this happened to me only it was a grisley bear about 8 or 9 ft tall i got a whole new respect for mother nature. wow those cutthroats were amazing and the enchiladas made my mouth water i think my wife and i are gonna try your recipe tonite. I have fished this lake several times. The Yellowstone Cutthroat is a gorgeous fish, especially when they sport that golden cast to their body. Thanks for giving me some great memories.

hiked and climbed Glacier Park for 35+ years. Hidden Lake was my fortress of solitude. must have visited its shores 70 times or more (twice a year average) i been to every nook and cranny around Hidden, including summiting Bearhat 3 times and accessing floral park beyond the far ridge. Love that place. Moved away in 2021. too many people. too many rude people. loving the Andes in Ecuador in retirement thanks for the video memories.

You can also fill the enchiladas with cotija cheese or Panela cheese. In the north of Mexico it´s very common to make enchiladas that way. And for the salsa we use most of the time dry chiles (chile ancho, chile guajillo). Either option is delicious!!

That elk was ✨majestic✨ I remember the day my son called me at work because there was a huge deer buck in the parking lot of our apartment complex during the rut. He had just gotten off the school bus. All I could tell him was hide behind other cars until he’s not watching you then 🗣 RUN!!!

First comment on the channel, but have been following for a long time now. Love the outdoor exploration, fishing/foraging, phenomenal recipes and expert fish cutting skills (so addictive watching T cut up a fish with his mad skills.). My wife and I are both chefs and love the content. Just wanted to say we were inspired by Jocelyn’s recipe here and totally rocked some enchiladas with leftover Turkey (after Canadian thanksgiving). What a superb episode. Those enchiladas were beautiful. I have an old food processor that I have never used. Just might have to dust it off. I know it is hard not to raise the rod tip when you get a strike but I think it would be better to just keep the tip down and strip strike when you get a hit. With the rod lower to the water it is easier to get the fly line on the reel and fight the fish on the reel.

Hey Man you should check out chevelon lake in Arizona at some point if you come this way. Biggest trout I’ve caught in the states! It’s a fly fishing and lure lake only with a mile hike down a fenced off gravel road.

Love the preparation. I've never seen enchiladas made that way but I already like it. I agree that oven baked can be far too dry and like the idea of lightly frying the tortillas. Definitely going to give that a shot sometime. Another great video!

Had a similar ginormous elk experience just outside grand canyon nat’l park. Those beast are huge up close…it shocked me as much as it did you. Great content, love the enchiladas…they looked delicious!

Enchiladas are one of my absolute favorite things to eat. When you make them like this its soooooooooo much better than oven ones. Personally my favorite are enchiladas suizas made with a green sauce.

Gorgeous west slope cutthroat trout, still haven't caught one of those. You missed our snagging season for Kokanee salmon. You were fishing in my backyard, so to speak. Glad you enjoyed your time in Glacier.

Love the video! Such a pristine area with beautiful views. I really like your cooking it’s so different than what I’m used to. I live in south Louisiana our food is a mixture of Creole and French. A lot of heavy sauces and boiled seafood. As well as fried. We don’t have a large bear threat. But we do have alligators and venomous snakes.

The Elk was Awesome 👌 👏. Just a little advice/heads-up, never put your head down to dear, elk or big horn sheep when you are close to them in the field. That means to them that the fight is on. Just think about how you have seen them fight on video. They all put their heads down before they attack each other. That very thing happened in Yellowstone with a young bull elk. Try putting lettuce underneath the enchiladas. It builds the dish nicely and you get to ‘decorate’ with cheese and crema, cilantro etc. lettuce underneath is a sleeper game changer
