►Ingredients for the Chicken Pasta
►For the Sauce
Whole garlic bulb
3 mild red chilies
5 basil leaves
3 sun dried tomatoes
1/4 tsp black peppercorns
1/4 tsp pink peppercorns
1 tsp thyme
1 tsp oregano
1 tsp red chili flakes (optional)
1/2 tsp salt
Sunflower oil to cover
2 cups or 450g passata
2 tsp brown sugar
1 chicken stock cube
3 tbsp flavored oil
►Chicken Pasta Sauce Prep
4 tbsp flavored oil
700g or 1.5lbs chicken mince (thigh & breast)
1 tsp black pepper
1 tsp red chili flakes (optional)
1 tsp smoked paprika
1/2 tsp salt (taste and adjust later)
1/4 tsp nutmeg
Pasta sauce
1 and half cup water
Fresh basil
►Cooking Pasta
80g - 100g fusilli or other pasta per person
Sauce is enough for 500g (1.1lbs) pasta approximately
Boil the pasta in salted water
Cheddar, Parmesan cheese as required
►Salad
Vinaigrette
1 tsp dijon mustard
1 tsp garlic paste
1 tsp thyme
1/2 tsp salt
1/2 tsp black pepper
Zest of half lemon
2 tbsp lemon juice
1 large egg yolk
5 tbsp flavored oil
2 - 3 tbsp balsamic vinegar
Golden cherry tomatoes
Baby plum tomatoes
1 red onion
1 gem lettuce
3 spring onions
Vinaigrette as required
