Any ideas on capping the the top of the side panels?

Yes -- I actually just solved this the other day. Basically, the top of the ribs flatten out and there was enough meat about 4-5" up from the bottom anchors to run another set of anchors into the ribs, it pulled the sidewalls into the hull and closed the gap! I will still probably run a piece of weather stripping or something to just to make sure nothing slips between the sides but no cap will be needed now.
