Thank you for your nice detailed reply Nan. I was a big mayo fan. Was never suppose to eat it. High allergy to eggs. That’s ok now since I am plant based. Just had the hardest time trying to find a replacement I will like. But listening to you this morning was a great encouragement! Oh those lilies!!!!! Make my heart sing🎶

I made this today for the family Memorial Day meal. It was different and beautiful. Everyone liked it. I will be making it again and bring it to potlucks.

I made the salad today since I love carrots and pineapple and wanted something a little sweet. I didn't have coconut or tofu on hand, but I had just made a big batch of your/AJ's famous ranch dressing and used that in the salad. It was delicious. I also love your rustic carrot cake recipe and usually make that into muffins. Thank you for the great information you provide!

Ohhhhh Nan!!!!! Can’t wait to try this! I love pineapple!!!!! I have never tried tofu! I will look for brand you like! What caught my eye first was your beautiful- happy vase of flowers!!! What are the pink ones?

Hi Kay! If you make the tofu sour cream to use for the salad, you will find that it becomes something that you will use all the time. It has a bright flavor that is wonderful on tacos, on bean soups, on so many savory dishes that you’ll always want to keep a jar of it on hand. The silken tofu you find in the market in the Asian section not the refrigerator section. I keep boxes of it on hand. I hope you like the salad as much as I do; adjust everything you put in it to your own taste. I love things nutty so I usually add a little bit more nuts. That was one of my Mother’s Day bouquets, and the pink flowers are Asian lilies. They’re beautiful and fragrant. You have to be careful if you have cats in the house because the stamen (The middle pointy part) Will make them sick if they chew on them. I don’t have that problem with my cats but I’ve known people who have.
