Recipe: How to Make Struffoli
3 cups flour
3 tablespoons Crisco
3 teaspoons baking powder
½ cup of sugar
½ tsp. salt
1 tsp. vanilla
4 eggs
3-pound jar of honey
Colored sprinkles
Oil for frying
In a food processor, pulse together flour, sugar, salt, and baking powder. Add the Crisco and pulse. Add the eggs and vanilla and pulse until the mixture forms a ball. Wrap the dough in plastic wrap and chill for about 30 minutes. Cut up the dough into 4-6 pieces and roll into ¼ inch strips. Cut each strip of dough into half-inch pieces. Roll each piece into mini-sized round balls.
Use a 4-quart heavy-bottomed saucepan placed over medium-high heat, heat the oil to 330 degrees. Check the temperature with a candy thermometer. It is important to maintain the temperature, so you may need to adjust the heat or remove the pan from the burner to keep the heat at 330 degrees. If the oil is too cool, the Struffoli will absorb too much oil before they finish frying. They should be a light golden brown.
When you are finished frying, place them in a large container with a paper towel to drain the oil and cool. Heat about two cups of honey in a saucepan, place Struffoli in a pan and cover with honey. Pour into a decorative bowl and shake on colored sprinkles. You can separate the dough into two balls and cut it into four equal parts. Makes about 6 to 8 dozen depending on the size of the balls.

Dear Hedy, Graze A mile for this wonderful recipe and video. I am also Neapolitan and Sicilian. My grandmother would make this every Christmas and I would help when I was little. Unfortunately she passed away this year and I wanted to remake her Christmas sweets for our family. This video gave me the comfort and guidance for a successful batch, Thank you!

I love you! All of my Italian family have passed. I love your little Italian phrases, I still use them too, but no one understands me. Struffola has always been my favorite, but no one made it. They bought it at Cammareri’s bakery in Bensonhurst, Brooklyn. Thank you for sharing and Merry Christmas 🎄🎁!

You should use that spoon that you pulled them out with to put them in the oil to fry. Then you wouldn’t burn your hands. Looks delicious.

as I said I make them very similar to yours, but you know, my mother's struf. were hollow inside, very airy..I don't know how she made them that way..possibly she used yeast in her dough..I wish I had her recipe 😊

My mother refused to bait unless it came from a box mix! So by 8 years old I was baking and then by 10: I was making full meals and baking.

She didn’t put sugar in the honey which is why the honey isn’t sticky enough to be able to pile the struffoli into a pyramid.

I just made this and 4 eggs is not enough for the 3 cups of flour. I had to add 2 more eggs.

Loraine Cisneros It’s always been enough when I make them. Did you use large eggs? If the dough needs a little more moisture you could add a little water.

Understood. Just to give you a laugh I'm down to two fishes for Xmas eve since i'm cooking for one. Baked Shrimp and Bay Scallop Scampi over Risotto Milanese, I will be posting the recipe over the weekend. But Woot.com had a special the other day, an entire Parma Ham Procsiutto of 10 pounds for $80. It arrives Thursday.
