Narrowboat Life and the Boat Community is something we love and it’s so hard saying goodbye to our boating friends. We leave the Ellesmere arm of the Llangollen Canal. A slight mishap with a lock and we damage our cratch cover, but fear not, we can fix it. Plus stunning Autumn Colours on the Llangollen Canal.

Another great vlog guys . I remember your first few vlogs - what I remember was how silent Anthony was and how reluctant he was to even look directly at the camera . Do you remember Anthony - in the beginning you would only give one word answers and wear a scowl that said ‘ get that camera off me and out of my kitchen ‘ . Lovely and fun! Some of the scenes were stunning: the bit up to the rainbow when you were pulling out, and the scenes of the canal with the trees and the light made it seem as if you were boating through a green and golden tunnel. Have a lovely weekend ❤ Instant Pot Lemon Chicken with Garlic ★★★★★ Keto Prep Time: 9 mins | Cook Time: 20 mins Ingredients: 6-8 boneless chicken thighs , skinless or with skin* sea salt and pepper to taste 1/2 teaspoon garlic powder 1/2 teaspoon smoked paprika 1/2 teaspoon red chili flakes optional or to taste 2 Tablespoons olive oil 3 Tablespoons butter (swap with ghee for paleo OR Whole30) 1/2 small onion chopped 4 garlic cloves sliced or minced Juice of 1 lemon 2-4 teaspoons Italian seasoning zest of half a lemon 1/3 cup homemade or low sodium chicken broth **PLEASE SEE NOTES BELOW 2 Tablespoons heavy cream OR coconut cream Chopped fresh parsley and lemon slices for garnish , if desired Directions: Season the chicken with salt, pepper, garlic powder, paprika, and chili flakes. To cook on the stove: In a medium-sized skillet over medium-high heat add olive and cook for 4-5 on each side, or until chicken reaches 165 degrees. Transfer browned chicken to plate and set aside. Return pan back to heat and melt butter. Stir in onion and garlic. Add lemon juice to deglaze the pan and cook for 1 minute. Add Italian seasoning, lemon zest, and chicken broth. Stir in heavy cream [if you like your sauce thicker - you can thicken with a cornstarch slurry (if not low carb) or arrowroot starch slurry (or xanthan gum) by mixing 1/2 teaspoon cornstarch (arrowroot starch) mixed with 1 teaspoon cold water]. Once the sauce has bubbled and thickened up slightly, add the chicken back into the pan until hot. Spoon sauce over chicken and sprinkle with chopped parsley.

Think there were the best autumnal colours in this vlog, almost perfect as if Paul had painted the scene, and the gold just superb. Happy Friday! This was a great vlog with lots of laughs. Ellesmere looks like a lovely town and it had to be so sad to leave so many friends behind. It was pretty amazing how many were all on the Llangollen at the same time. I've been watching the Rhapsody In Blue vlogs of the area as well. Great vlog as always you guys have a lot of friends on the canal which is awesome and all seem so pleasant and easy to get along with. Fall colors were stunning. We just had an ice storm on Wednesday very nasty schools closed and lots of power outages and trees down. Thank goodness it’s over and much better but still cold. Have a good week take care ❤

Love watching people cook and bake. The potatoes were being done a certain way, I can't spell it, hassel something 😆. I've never tried it, but I've seen it done on cooking shows. Hey Debba. We love a bit of teasing. We had lovely time we had with wonderful friends. We were sad to leave. The Lemon Garlic Lemon chicken is a favourite of mine. Hope you keep warm and safe in the snow. Here is the recipe Instant Pot Lemon Chicken with Garlic ★★★★★ Keto Prep Time: 9 mins | Cook Time: 20 mins Ingredients: 6-8 boneless chicken thighs , skinless or with skin* sea salt and pepper to taste 1/2 teaspoon garlic powder 1/2 teaspoon smoked paprika 1/2 teaspoon red chili flakes optional or to taste 2 Tablespoons olive oil 3 Tablespoons butter (swap with ghee for paleo OR Whole30) 1/2 small onion chopped 4 garlic cloves sliced or minced Juice of 1 lemon 2-4 teaspoons Italian seasoning zest of half a lemon 1/3 cup homemade or low sodium chicken broth **PLEASE SEE NOTES BELOW 2 Tablespoons heavy cream OR coconut cream Chopped fresh parsley and lemon slices for garnish , if desired Directions: Season the chicken with salt, pepper, garlic powder, paprika, and chili flakes. To cook on the stove: In a medium-sized skillet over medium-high heat add olive and cook for 4-5 on each side, or until chicken reaches 165 degrees. Transfer browned chicken to plate and set aside. Return pan back to heat and melt butter. Stir in onion and garlic. Add lemon juice to deglaze the pan and cook for 1 minute. Add Italian seasoning, lemon zest, and chicken broth. Stir in heavy cream [if you like your sauce thicker - you can thicken with a cornstarch slurry (if not low carb) or arrowroot starch slurry (or xanthan gum) by mixing 1/2 teaspoon cornstarch (arrowroot starch) mixed with 1 teaspoon cold water]. Once the sauce has bubbled and thickened up slightly, add the chicken back into the pan until hot. Spoon sauce over chicken and sprinkle with chopped parsley. Serve with your favorite sides and garnish with lemon slices, if desired. Have a good weekend ❤
