Kent this Patrick ex Us Army combat medic from Ireland. I tried that waffle batter for pancakes and they didn't look perfect but they tasted awesome brother!!!! He ain't lying about that seasoning. I ordered recently: 1 Mesquite spatula (Which works phenomenally), 1 bottle Original Red River Ranch Seasoning, 1 Bottle Mesquite Red River Ranch Seasoning, Red River Ranch Dip, and The Green Chile Chipotle Relish. For roughly $50 you got yourself quite the ingredients for some good cooking. I made steaks in a iron skillet with butter and garlic. Marinated the meats with lime juice and used both seasonings. Made my very own pasta with original seasoning. Tuna melts with mesquite seasoning. Today's cold tuna lunch with mesquite seasoning. I love the seasoning, I now swear by em! 5/5 stars for me. Thank you Kent and Shannon for quick delivery and well packaged items. Ships better than Amazon it does ;).

Just made these for dinner...holy cow! I've never had chicken that tasted this good. This sauce is spot on perfect! Love that it's sweet but hits the spice on the back end. I think it may replace the BBQ sauce we usually put on ribs. Definitely going to be trying more of your recipes. Thank you for sharing your knowledge and being such a delight to watch.

Fantastic! Brings me back to when I worked in a kitchen years ago. I was brining several dozens of chickens during my shift while also making the sauces and rubs etc. The best part was always making the brine and fresh herbs 🌿 and adding my special sweet touch to the dry herbs and spices and seasoning then rubbing it all in-between the skin and the meat on the bone. Them thangs were flying out the market.. Thanks for the nostalgia and the memories you brought back Ya sure did! 👍

I've watched many of your recipes, and recently got your Taste of Cowboy book and your Red River Ranch Original and Mesquite spice blends as gifts for Christmas. Awesome!!! I made this recipe on my Broil King Bbq in-16C cold and dark tonie. Getting the lil smoker box to smoke, took some doing- Im.new to the smoking part, and maple is not the most flavourful. I also.did not have the Crystal Hot Sauce, so I subb'd Franks instead. It had my taste buds a dancing. The end result , the chicken was awesome! Great recipe. Thanks Cowboy Kent! I made my version with thighs and green Tabasco for the hot sauce. It was a big hit with my Sons and the heat was spot on for us. Served it with some yellow squash sauteed then stewed with some tomatoes and a bit of onions. No leftovers!

Tried this and it turned out great. I made and extra large batch of the sauce just in case. I put the extra in a jar in the fridge. My wife thought it was a jar of my homemade BBQ sauce so she used it to make BBQed beef in the crockpot. What a great mistake.

I grew up with my daddy cooking on a Hasty Bake. He grew up in Tulsa. That's proper southern cookware right there! I haven't tried a kettle cooker but I'm in my third offset smoker for slow, low and smokey. You can't beat a Hasty Bake for the rest though

That looks really good. I do somthing similar on the smoker. Dust it with some corn starch and the fat coming of the leg creates a crust. Smoke still penitrates and you have a crust to really hold on to the sauce.

I brine and smoke A LOT of whole chickens and the best vessel I've found for brining chickens is a gallon ziploc bac. From my experience 1 quart of brine is plenty to brine a whole chicken. Just put that bird in the bag, pour in your brine(I use 1/4 cup kosher or sea salt per quart to start and whatever other spices)and squeeze out all the air and seal the bag. put it in a container that'll hold it, just in case it leaks. But I've never had it happen as long as the zipper seal is on top. This is the way I brine all my meats. Even when I'm making my homemade corned beef, venison, pork and elk(when I can get some). Nothing beats this method as far as efficiency of how much brine is required to keep the meat submerged in the brine.

We got some white stuff in the Western part of the State and had a frost warning the last two nights. Why don't you send a little bit of that heat to South Dakota. These drum sticks look very tasty, will have to give them a try. I found a couple of big bags of drumsticks in the store last weekend..........I love the yard bird. You should make your two seasonings in a salt free version. I have tried them both and love them but they don't like my feet. I bet they would sell like hot cakes. Great video Kent and Shannon.

Kent I got me 2 of dem pit barrels and a suggestion what make it mo better. Put them rebar rods even if not going to hang meat on em, it will keep that heat where needs to be, without them rebar rods it will burn hotter and some time mo hotter than you want it to cook, I love my PBCs!!

Alder wood yes fantastic up in the Northwest and Alaska alder is the king mainly for fish you can’t make smoked salmon perfect without it. Red cedar for cooking salmon on planks or skewered over an open fire.

@@N.barakos1845 The most common way would be to salt and pepper our meat or chicken, add some bbq spice or chicken braai spice, grill it over the coals until it's done. Some of us add marinade to it just before it's done. Originally it was done with only salt and pepper. Just want to add that our spices are very flavorful and we enjoy putting mix flavors onto our meat. Smoking is not unheard of but no one smokes chicken or meat here
