I made your spicy guac recipe and I must say.....it was the best I ever had! SO full of flavor! I ate the entire thing in one day! I had it on toast, a cheese burrito and the last bit with tortilla chips. It didn't even have a chance to oxidize! I did cut the recipe down using 2 avocados because it's only me in my household. 2 ripe avocados, 2 fresh limes, 2 good size fresh jalapeño peppers with seeds left in (I like it spicy 🔥), 1 small-med fresh ripe tomato, 1/2 small-med yellow onion, small handful of freshly chopped cilantro, salt, pepper and some cumin to taste. I don't recommend hot house tomatoes because they are too juicy (unless you drain them). Beefsteak tomatoes work well, as do Big Boy.

@@justcheill If your guacamole is good, there won't be any leftovers. Also, I've found that the pit thing has no effect on the freshness. Citric acid aka lime juice works much better, but too much overpowers the guac. Maybe you've had better results with the pit, but not I.

Great recipes--we love guac too and I make it with different variations, and yours look very tempting. Note on removing the seed--i just use my knife hand to come down into the middle of the seed--without using my other hand to hold the avocado. Why? About 15 years ago on a nice sunny 4th of July at my dad's house near the beach in northern Indiana, he was holding the avocado with his left hand with his thumb wrapped around one side. He then hacked downwards with he knife, didn't hit the seed dead-on, and the knife slid right into his thumb. An urgent care visit and several stitches later everything was fine! To get the seed off the knife I just swipe the knife close to the edge of the sink so the seed actually makes contact and gets pulled off and into the sink.
