I must have eaten this appetizer 100 times in my life. But, never with balsamic vinegar. Definitely gonna try that out next time. Mozerella, tomato, basil and EVOO were just made for each other.

My idea of Caprese Salad for the last few decades has been winter tomatoes from some green house tomato factory and mozzarella made in China and dried basilica. Tasted like a glass of water. Every time. I was served this a few times from enthusiastic home ... kitchen owners haha. "Why are they doing this? Why are they eating this? Worst of all, why is this salad famous enough for me to know it by name?" All those questions was what kept me awake at night back then. Today I sliced up a gorgeous tomato, and those memories came back. I thought there just gotta be more to Caprese Salad than what my friends knew about. So here I am. I still have a bag of tomatoes and tomorrow I will go shopping for real Mozzarella and the rest although I think I have most of it ... Wish me luck! :D

Just made this a few days ago. The mozzarella was reduced in the supermarket to 49 pence so I made a generous caprese salad for 2 for £1.49 (just under 2 dollars I think) 👍

Any salad with hearts of romaine, or mix greens, avocados, cucumber, radishes, pineapple, raisins, beets, jicama, cherry or any small tomatoes, and toasted almonds, olive oil and fresh squeezed lemon or balsamic vinegar 😋😋.
