Disclaimer Using “Labba” (large rodent), was a poor choice of wild meat to showcase this amazing dish as 95% of most Guyanese have never seen nor tried this rare wild meat so it’s not that common. Let’s not confuse it for Guyanese main meats. Some say it’s a delicacy but the majority of Guyanese prepare “Pepperpot” with Beef or Pork as the meat has a more firm texture to hold the sauces. Pepperpot is a delicious dish if prepared properly.

We do not eat rat! He is in Guyana because of the oil. Tourism is coming and he is one of the first to advertise what we have to offer. We need to be clear our messages are positive and inspiring! Never heard of Laba in pepperpot at all and I have been making it for decades!!

Actually, you can make it with any meat, even fish. Beef is just the preferred meat for persons living on the coast land.

It's labba. Any real guyanese knows this. It makes for great curry and since any meat is put in pepper pot, it's a given. No surprise here, I actually had labba as a stew for the first time this past xmas.

I think it’s because you were born here and most Guyanese people unless they still had family living in rural parts didn’t really prepare bush meat because it wasn’t available. My mom didn’t prepare anything other than beef and chicken and the only reason I got any bush meat was because of my family that lived up in the corentyne river. Who would visit whenever we were in Berbice.

The natives usually makes it with wild meat e.g. labba wild cow and wild hog and it's delicious. They usually start to make it like one week before. For pepper pot cannot be made in one day

Pepperpot is an original dish of the Amerindian people and Labba, Deer, Aquri, Wild hogs and other animals in the jungle were used in Pepperpot as there was no beef or chicken at that time where these folks lived so many hundred or even thousands years ago. Pepperpot made with beef and chicken is a modern day thing. Labba is certainly one of the most delicious meat in Guyana.

I'm from mahaica and we never ate Labba we used to make fun of people eating Labba cause they were poor looking back I feel bad but still Labba is a poor Mans meat sorry to burst your bubble but facts are facts.

Which school y'all went to or which Guyana y'all grew up in??? Amerindians created pepper pot and they didn't have cow (beef), pig and chickens running around. They used labba (that same rodent), Peccary (wild pig) and/ Tapir (what we call wild cow). Since the theme that Gordon was using is jungle cooking their focus was the amerindian way not county nor city way of cooking. Educate y'all self lil before talking trash you know nothing about.

@@dorreonlord9836 Thank you! I lived close to Guyana on the Brazil side in the bush and I never thought of labba as a rat. Sure, they are classified as a rodent, but why make the leap suddenly to "rat"? It's so reductionist. I think they were getting Gordon ready for what he was going to have in the bush with the Macushi, where ingredients for pepper pot can include ants and wild mushrooms. Also, maybe you can answer this: I only know pepper pot from the Macushi. In the city is it not spicy? In the bush it's so spicy it gives me pain just thinking about it.

I don't know much about Guyanese food but a buddy of mine is from there. He turned me on to something along the lines of a fried potato and egg ball. Honestly, one of the best potato related dishes I have ever had.

I had a neighbor who was from Guyana she was of Indian descent and her cooking was AMAZING!. My mom is Jamaican and there are lots of similiarities in their cooking.

Firstly, Guyana is not a "tiny island". It is part of a continent and is four or five times the size of Britain. Secondly the Labba should have been explained as being used in the Quarantyne, where he was cheffing using the Labba as a delicacy, for the workers out there. In the city lamb, brisket, beef and cow foot are the usual staples of Pepperpot! I cannot stand the subliminal denigration of our people!! Words are important!!

Ok folks - let's not tek in over the labba controversy. I was born and raised in Guyana and my mother is a mighty cook trained at Carnegie in the good old days. Pepperpot can be made with any meat, and can be eaten at any time of the year. But yes, most people eat it at Christmas time and cooked with cow products. And Amerindian food is one of the main pillars of traditional Guyanese cuisine, so Delvin was correct. We're not like Americans, we honor our first folk. Adapted West African and Indian foods are the other 2 major pillars. British and Chinese foods are minor pillars.

While the publicity was good and show was interesting. I find the lack of respresenting other cultures in Guyana disappointing. While highlighting AmerIndian culture was BEAUTIFUL, there are 6 races that make Guyana what it is today. I also would have liked if someone of the lingo was corrected. It such a huge platform to get it incorrect..... For those not from Guyana.... They are Beautiful resorts, travel destination, markets, and booming city. Please explore that many wonders Guyana has to offer as well as the the Amazing AmerIndian tribes. We learn to love and respect one another to be One Culture - One Love..... (Barticia)

Just for the record, peppa pot is typically made with oxtail (beef), not chicken, pork, or laba. Not saying they don’t use rodent but the average household makes it with beef.
