The part that had you confused with Zabuza is that Kakashi had him in a Genjutsu the entire time, so yes he was actually reading his mind, because Kakashi was literally in his head via Genjutsu. To elaborate, Zabuza being under a Genjutsu is what made him think that Kakashi was not only copying his movements, but able to see future movements, but in reality being under the Genjutsu is what allowed Kakashi to understand what Zabuza intended to do next, what he was thinking, etc. Also the top candidate for who Kakashi was referring to when he said "stronger than me yet younger than you" was probably Itachi in the past. Itachi joined the Anbu when he was even younger than Naruto and was definitely stronger than Kakashi.

More than likely, a (or multiple) prior opponents have said that out loud so Kakashi can predict it. Or, Kakashi is betting Zabuza is confused and wants to freak him out by taking an educated guess at his thoughts. It's no more "Mind reading" than a psychic doing a cold read. I mean, my mom is a super casual gamer so when I just instinctively check a corner/break a wall for ammo, collectibles, or other goodies I can predict what her question is going to be when she starts to ask; "How did you know that was there?"

My thought about how Kakashi knew what Zabuza (idk how to spell his name) was about to say was because the genjuitsu he's using to subtlely influence his opponent into thinking in ways Kakashi wants. Small things like speaking in their head and small movements. It'd be a very minor genjutsu, but also an incredibly effective one, when he's trying to get into his opponents head.
