Pre-baking and flipping the pie is genius. I tried making a pan pizza in my ooni a few days ago but the bottom wasn't even close to done while the top was already finished. Had to finish it on the stove top to get the bottom done 😅

What’s the largest pan size that fits in the Ooni Volt? The 14.5? Or 16? I have an outdoor Ooni, but my natural gas burner in it is too finicky, I’ve bought a second burner and it’s the same, I can’t keep it lit. Of course, I bought it a while ago before the Volt was available..thinking about getting one. Outdoors is great for summer, but our winter is long and snowy, plus cooking indoors is more convenient..thanks again for your lovely content..my German Shepherd just fell asleep and is twitching, his head is resting on my arm listening to the calm video..

Biga is only a prefermented dough and should be used after 18 hours of being made ;)

I am a little irritated. Aluminum hardly conducts any heat. How did you get the base so good? I ordered two aluminum pans and put the oven on top to bottom heat at 250 degrees, I put the pans on the bottom, but the dough was quite mushy

I noticed that the pan you are using is not perfectly flat, which is not ideal if you are trying to get a crispy pizza bottom. Did it arrive like this brand new or warped after usage?

Good thinking. Uhmm not sure it arrived like that. But in any case you would only have this problem is baking on a flat surface, not on a domestic oven’s grill!

for me, way too much salt. High blood pressure means low sodium. I use Morten lite which is 1/2 the sodium. Can it reduce the salt?

You were at 8 or 9 tbsp of olive oil, but you didn't provide measurements for the last 2 applications, so probably safe to say 10 tbsp all told. Gorgeous pizza
